Happy October! Halloween is right around the corner! This week for us is filled with appointments, fun and easy dinners! Meal Plan Oct Week 1 2020.
What happens when you buy a bag of avocados at Costco!? They all ripened at the same time of course! Hence a heavy avocado week at our house. This week we are running around between bunch of doctor appointments, house maintenance projects, DIY costume making and an outdoor dance party!
So dinners are easy, fast and simple this week.
MONDAY
Stuffed Avocados – This is a fun super duper easy recipe and is very versatile. From beans to quinoa to tuna, you can stuff them with anything you have on hand. The hubs will be stuffing his with tuna and I have leftover lentil sloppy joe mix for mine! YUM!
Kids: Guac and quesadillas!
TUESDAY

BBQ Tofu and Roasted Root Vegetables – tofu is lightly spiced and coated with cornstarch then baked and covered in BBQ sauce. Potatoes, turnips, beets and carrots are roasted with olive oil, salt and garlic.
Kids: Crispy tofu without BBQ, roasted veggies and garlic bread on the side.
WEDNESDAY
Coconut Curried Lentils with rice and avocados – This an easy standby for us all winter long. Super healthy and quick to make. Served over super soft jasmine rice and a few avocado slices on top.
Kid: tiny cup of lentils to try with a big bowl of rice, avocados and roasted veggies. Applesauce on the side.
THURSDAY
Bread board picnic dinner – For our Outdoor Dance party night we are planning a simple dinner board with fresh warm bread, veggies and dip, dried fruit and warm apple cider.
FRIDAY
Grilled Pinto Bean Burritos –What is better on a Friday night than a packed burrito with rotel rice, pinto beans, guac, and salsa? Nothing I tell you, nothing.
Kids: simple burritos with rice, guac and cheese. Fruit on the side.
Baking
4 ingredient Banana Pancakes- The result of being gone for a few days is lots of ripe bananas. So I’ll be making a double batch of these yummy easy pancakes for the kiddos with a tablespoon of PB added in the dough.
