[Recipe update 2/26/19] I still make this recipe a lot for by 2 littles. Poppy now prefers them with chocolate chips and I sometimes add tablespoon of peanut butter to extra protein. I still make these for lunch too especially when we are on the road or I’m packing them lunches.
Happy Monday everyone! I’m feeling especially happy this morning because our get-the-house-on-the-market-cleaning-weekend-of-doom is over! Finally! Yay! So this morning baby and I are celebrating with 4-ingredient banana pancakes! Easy, delicious, flour-less, gluten-free, and kid/baby friendly!
We had quite a weekend starting on Saturday bright and early and at 20 degrees. That was race day! 10 miles woot woot! Last fall my sis-in-law and I were looking for a race to run in the spring that was challenging. And having just completed a 6 miler in September together, we wanted something a little longer. Goldy’s Run in April was a winner!
April seemed like a good time weather-wise, 10 miles was perfect and we would get to finish the race running into TCF stadium where both the Minnesota Gophers and currently the MN Vikings are playing… Yes!!!
Final race review: a fun 7 out of 10. Pros for the race included the course, chip timed, amazing finish line, cute shirt, and awesome volunteers! Cons for me were the weather, traffic in Dinky-town, lots and lots of people, sub-par post race snacks, and lack of signs and directions at the finish line for spectators. My personal time was a 9.32 mile average and final time of 1:35. Not too shabby considering my limpy last mile and not so great training.
What made this race extra special was running with 2 fellow family badass girlies and seeing my smiling family waiting for me at the end! Plus I got to live a Rudy Notre Dame glory moment by hobbling my way into the stadium finish line to people cheering 🏃Totally loved it! All I needed was a little Eye of the Tiger playing in the background!
Following the race, it was cleaning and staging time! 2 things that made it way harder, my locked up calf muscle and Miss Baby-pants. Needless to say the weekend consisted of lots of limping, chasing Poppy everywhere and bribing her with toys and shiny things to keep her busy so I could get work done with the hubs. Lucky for us baby had a G-ma date on Sunday. So after lots and lots of window cleaning, vacuuming and organizing, we are done-ish!
Next up, photos of our place and then hopefully lots of showings. But before that, pancakes and coffee are a must. After this weekend, a breakfast treat is definitely in order. And to make it extra special I want to share it with my little speedy creepy crawler.
Since we are sharing, these pancakes need to be made of wholesome ingredients, naturally sweetened and soft for my 1 toothed girl. 4 ingredient banana pancakes are the perfect thing. Bananas provide the sweetness, oats supply the protein, and an egg binds it all together with good cholesterol and iron. Bonus for these pancakes is the soft texture. Perfect to soak up my toppings or for baby to easily munch on.
I made these pancakes small because super tall pancake towers just makes me extra happy. And I topped it with blueberries, a bit of yogurt and some berry preserve. Yum yum yum. Baby had 3 pancakes plain with her morning apple juice. A lovely pancake breakfast with my little peanut = all is good in the world 🙌
Servers 3 kiddos
Yields 9-10 mini pancakes (about 2inches wide)
Ingredients
- 1 large ripe banana*
- 1 egg
- 1/4 cup rolled oats
- 1/4 teaspoon baking powder
- pinch of salt
- Optional: ¼ teaspoon vanilla extract
Instructions
- In a blender or food processor, combine all of the ingredients.
- Blend until smooth. Let the batter stand for 20 seconds until thickened slightly.
- Heat a skillet or griddle over a medium heat with a bit of oil or butter.
- Pour 1/4 cup or less of the batter into the skillet, cook on each side for about a minutes until they are golden brown on each side.
- Serve them up with your favorite toppings, add a few mini chocolate chips or enjoy them plain like baby Poppy.
Notes
Make sure you use a ripe banana. The riper the banana, the softer and sweeter the pancake. Without a ripe banana, the pancake will be dense and chewy. These pancakes freeze great and are fun little treats for kids at any time of the day. They also make for an easy last minute lunch or dinner.
