Citrus brings life and brightness to the coldest of days! Today I’m sharing a simple, bright, delicious Whole Orange Cake made with, you guessed it, a whole orange!
We are in full hygge mode at our house right now. It’s finally starting to get really really cold, as in highs in the single digits. When this happens, I like bringing a little brightness and warmth back to our lives through food.
Tuesday this week was a big day for us. We received some long awaited results for a new program we are staring. So in an effort to not think about that all day, I decided to bake. Haha this is, in a nutshell how I operate.
Let me start off by saying this cake is an absolute favorite for several reasons:
- It’s bright, moist and packed full of orange flavor
- It has greek yogurt
- It has only 7 ingredients
- It has a WHOLE ORANGE!
That’s right a whole orange, peel and all. The cake itself is simply made with pantry staples like flour, sugar, eggs, butter, and baking powder. A third cup of Greek yogurt keeps the cake moist and a whole pureed orange gives it that full burst of orange!
Once the cake is baked, an orange syrup (orange juice and sugar) is poured over the cake to add extra moist, sweetness and a bit of orange pizzaz!
This year so far, I’ve already made it twice and we are still in January! Once for my Dad’s birthday and this week for a Moroccan inspired dinner! Both times equally delicious. And of course an added perk is that we get cake for breakfast the next day!
So go buy yourself an orange and bring a bit of brightness to your taste buds, home or office! They will all thank you 🙂
Ingredients
- 1/3 cup plain Greek yogurt
- 1/3 cup butter, softened
- 3 eggs
- 1 3/4 cups all purpose flour
- 2 1/2 tsp baking powder
- 1/4 teaspoon salt
- 1 cup sugar
- 1 large organic orange, washed and cut into pieces, seeds removed (do not peel)
- Orange Syrup
- 2 1/2 oz fresh orange juice (or squeezed orange)
- 1/4 cup sugar
Instructions
- Preheat oven to 350°F.
- Prepare an 8" springform pan by buttering (or greasing with oil spray) sides and bottom very well.
- Beat sugar and eggs in a large bowl with a mixer until light and fluffy.
- In a separate bowl, sift the flour and baking powder. Alternate adding flour mixture and softened butter to the sugar/egg bowl. Once combined, stir in the yogurt.
- In a food processor, process the whole orange (sliced and seeded) until it is almost pureed.
- Add the orange puree to the cake mixture and mix until evenly combined, then pour the batter into the prepared pan.
- Bake for 50 to 60 minutes. Cake will be done when a toothpick comes out clean. Allow the cake to cool for 15 minutes, then remove from the spring form pan.
- Melt the sugar in the orange juice over medium heat and allow it to simmer until sugar is melted and liquid has a syrupy consistency. Brush over the top of the cake and allow to cool completely before cutting.
Notes
You can skip the syrup if you want but it really adds nice moisture. You can also add a orange glaze with powdered sugar.
