Who doesn’t love nachos? Seriously, they are delicious. Today I’ll be eating nachos for dinner and wanted to share the healthy nacho recipes I love! Healthier Nachos why NOT?!
Our dinner tonight? Nachos. Oh yea! Our dinner once a month, nachos! We have a thing for nachos. However, it’s no secret nachos (especially those at restaurants) are not that great for you.
Instead I like indulging in nachos with all the fixings in a healthy homemade way. Now let me pause and say, I m not saying deprive yourself from good ole greasy nachos while out with friends for beers, by all means get your groove on! But in an effort to eating a plant based diet in a fun tasty why, I love making healthy veggie loaded nachos at home!
The easiest way to make nachos a little healthier is to use less chips, and cut back on some of the cheese. Personally I opt for vegetarian low cheese versions. If I have the time I whip up a vegan queso but normally I skip it because I’m lazy!
The hubs likes his with meat and cheese. His are still fairly healthy as the taco meat is not super greasy and way lower in sodium. He also swaps choose greek yogurt over sour cream, uses less cheese loads up on the healthy fixins like guac and beans!
And for the girls, nacho night normally involves a few regular chips, baked sweet potato chips, cheese, taco meat and avocado. Usually everyone is happy!
Alright here are our favorite traditional nacho ingredients:
- Roasted sweet potato slices instead of fried chips
- Plain greek yogurt instead of sour cream
- Black beans or refried beans
- Baked corn tortilla chips instead of fried chips
- Pickled jalapenos
- Guac because duh!
- Pico de gallo
- Hot sauce or good salsa
- Jackfruit cooked up with taco seasoning
- Ground meat with homemade taco seasoning
- Vegan cheese sauce

2. Gotta love the sweet potatoes in this one! Just have to plan 20-30 min to roast them.
3. You really can’t go wrong with potatoes. These nachos are totes delish and very filling!
4. Baked corn tortillas are a great base for healthy nachos! You get the same corn flavor and crunch as regular chips without being fried!
5. Wild card! OK these are not traditional but damn they are good! I love a Greek everything, nachos included. Plus love the hummus and use of pita chips.
