It’s a long extra cold week so meals are all about cozy, comforting and fast! Cold Week Meal Plan (Dec week 3).
Happy Sunday friends! Are you staying warm wherever you are? We are definitely trying to over here! Wool socks and sweaters all day long! Lots of tea, coffee and hot chocolate by the fireplace too!
I mean check this forecast out… seriously! I think mother nature is pissed off at us.
We are heading into week 2 of our new full time weekly schedule and now more than ever a meal plan is super necessary! My errands are way less frequent and I am trying to be as efficient as possible with my time.
I am excited to start a new weekly challenge on this cold week: Making a new cookbook recipe every week! I kicked this off last week with a super tasty Moroccan Chicken Tagine and green bean salad. And this week I’m making a Tuscan Soup for my lunches!
Dinners this week are definitely inspired by cozyness (hence soups and gnocchi) and what I have in my fridge (sausage, eggs and puff pastry). I am also hoping to crank through some major meal prep before the week starts!

MONDAY
Ginger Carrot Soup (vegan) and Pizza Pinwheel
Super duper easy to make, healthy, creamy and satisfying on a cold day! And the pizza pinwheels are really easy and yummy too! My kids destroy these!
Kids: Same!
TUESDAY
Green Chicken Sausage, Potato, Pepper Sheet Pan Dinner
Veggies are chopped on spread on a baking sheet, sausage is nestled in the middle and then you just bake! Easy clean up and really yummy meal. I add tofu for me!
Kids: Same with some bread and fruit
WEDNESDAY
Date night –Not cooking today!
Kid: Bread, cheese, fruit and nuts board dinner
THURSDAY
4 Ingredient Baked Gnocchi and Roasted Veggie side
Total comfort food for me! I love this meal especially in the winter. It’s saucy, cheesy and those gnocchi are so soft! Also it takes about 7 minutes to throw together.
Kids: My kids don’t like red sauce (except on pizza) so it will be a buttered noodle night for them!
Friday
Epic Bagel Sandwiches with a chips and guac side
Easy peasy alert! Everything bagels from St. Paul Bagelry and chocolate chip for the kids. Fried egg, avocado, cream cheese, sprouts, and bacon for the hubs!
Kids: Bagels, egg, cheese and fruit
WEEKEND
Pizza and leftovers!
SNACKS
- Avocado Chocolate Truffles
- Blueberry popsicles (loaded with spinach and cauliflower)
- 3 Ingredient PB cookies
- Hot chocolate! Especially on Wednesday when the high is -12!!!
