Hi guys,
Hope you are all healthy, well and staying home. This is stay at home week 1 for the state of Minnesota but week 3 for our family.
Last week was a long one for us. Doing the best we can managing ABA Therapy (both virtual sessions and meetings, and therapy run by moi aka mom), keeping the kids busy and learning, getting outside, digesting daily Covid-19 news and just trying to stay positive, active and virtually social.
Food wise, we are trying to go 2 weeks without going to the grocery store, this is week 2 for us. So I’m running low on fruits and veg and making some pantry meals.
MONDAY
Fettuccine Alfredo, garlic green beans and leftover bread.
I had 1/3 cup of heavy cream that expires soon which is perfect for Emerils super simple Fettuccine Alfredo. Sides were the last of my green beans and leftover bread toasted and buttered.
TUESDAY
Carrot Ginger and Butternut Squash Soup with homemade croutons
Carrots and butternut squash are the 2 veggies I still have lots of because they last forever! Whipping up some creamy soup and using the last of my weekend bread load, plus some extra I have frozen for some killer croutons.
Butterscotch Brownies – making these too since dinner is on the lighter side.
WEDNESDAY- DATE NIGHT
Cashew Chicken and special take out beer
Date night this week is a take on Chinese good take out and beer! We will be making Pinch of Yum cashews chicken (extra spicy with Thai chili peppers) with jasmine rice! Then washing it down with beer from a local brewery picked up curbside.
THURSDAY
Borracho Beans with all the fixings
My mom made these super tasty borracho beans over New Years and both the hubs and I loved them! Cooked up with spices and beer, these beans are a great way to use up canned or dried beans! I precooked the dried beans in the crockpot then cooked it up with bacon and beer. We will be serving them up with a dollop of Greek yogurt, cheese, a few dashes of hot sauce and tortilla chips!
FRIDAY
Nachos!
Loaded nachos! I am out of avocados, but instead we will be loading them with Mex spiced beef, cheese, a spicy Greek yogurt sauce, pickled jalapenos and beans!
SUNDAY
Sardine and homemade bread board
I’ll make my easy no-knead bread and make a dinner board. On the bread we’ll do a little dijon with canned sardines in olive oil (thank you Costco). The rest of the board will have cashews, apples, cheese and a little red wine.
