It’s been a while. I hope you are hanging in there and doing your best to stay positive.
We are still here and doing what we can to isolate, stay healthy, stay postive, and stay connected.
Day to day life right now feels calm and slow. For us, having time to enjoy our home without others coming in and out has actually been a welcomed change. Of course we miss our family and friends but the silver lining for us has been the ability to enjoy our family time just the 4 of us.
The weather is warming up and that, of course, has brightened our day to day life. Being outside has been our #1 attraction during quarantine and I am soooo grateful for that.
Personally, I am finding joy in: rediscovering yoga, taking a mental vacation to France by re-reading an old fav (Peter Mayle’s A Good Year), playing online trivia with the hubs, and connecting with friends and family through zoom as much as possible.
We, as a family, are tyring to keep up the good deeds, as much as we can. Cards, posters, calls, texts, deliveries, driveway chats, whatever it takes. The more we can help each other, the less painful this whole thing is going to feel.
In the kitchen, we are on day 10 from my last big grocery haul and still focusing on eating the produce that is getting sad while leaning on my pantry for inspiration.
Oatmeal! Slow Cooker or Overnight!

If oatmeal is not the best quarantine meal, I don’t know what is! A big batch of oats lasts forever, is healthy and keeps you full! We have tried to make it special at our house with extra toppings like peanut butter, chocolate chips, swirled in jam or apple butter, and even sprinkles!
Sheet Pan Dinner
We rocked 2 sheet-pan dinners last week in a hurry. This is a stress free way to use up anything you have. All you need is 1 protein and a few veggies and call it dinner. Our sheet pan dinners for last week were
- Sausage and chickpea with peppers, onions and potatoes
- Meatballs with a spicy yogurt dipping sauce paired with za’atar broccoli and cornbread. Used this recipe as inspiration.

We are still on the pantry bean kick at our house. I’m so excited to make this chickpea and potato curry because its so insanely flavorful and comforting! Loaded with spices, it’s easy, affordable, and makes delicious lunch leftovers. If you really want to get fancy, make some naan on the side.
