What is it about kids and sprinkles? It’s like they are born hard-wired to love sprinkles! My tot for one is completely obsessed! She can spot a sprinkle from a mile away and will try just about anything if it has sprinkles on it!
It’s cute really much she loves them!
For example, everyday without fail she asks me if she can have a “donut sprinkles” with a super adorable excited look on her face! And every day I tell her I don’t have one. Except for Sundays when we actually do get donuts and she finally gets her glorious sprinkle donut!!!!
As much as I don’t have an obsession with sprinkles, I can totally see why they are fun to eat. They kind of make you feel l like you are eating unicorn food! So I am not at all opposed to them. What I don’t like is that they tend to be synonymous with junk food.
So the other day as my kid asked me for a “donut sprinkle” for the bizillionth time, I thought what would be a good sprinkle covered snack that is healthy instead of junky?
Peanut Butter Sprinkle Bites!
All you need for this tot treat is your favorite nut butter, some oats, dates, maple syrup, a little flax seed meal for extra goodness and sprinkles of course! Mix’em up, roll up balls and pop them in the fridge.
Kids go ga-ga over this protein and fiber packed snacks because…
- they taste like PB cookie dough
- they are covered in SPRINKLES!
Now I know sprinkle bites won’t replace my tot’s beloved sprinkle donut but these days it’s a close second and I’m totally cool with with that.

Yields 35-40 balls depending on the size
Ingredients
- 1 cup medjool dates, pitted
- 2 cups rolled oats
- 1 cup peanut butter (any nut butter is fine)
- 1/3 cup maple syrup
- 1/2 teaspoon vanilla extract
- pinch of sea salt
- 3 tablespoons sprinkles
Instructions
- Place rolled oats in a high speed food processor or powerful blender. Process for about a minute until it looks like oat flour.
- Then, add the rest of the ingredients and process for another 1 to 2 minutes until your dough is formed. It should look and feel like cookie dough.
- Scoop out roughly 1 tablespoon of the mix and then roll into little balls with your hands.
- Refrigerate and enjoy straight out of the fridge! You can also freeze them on a cookie sheet and then transfer to a Ziploc bag in the freezer.
Notes
Store the bites in the fridge for about 2 weeks or in the freezer for up to 2 months. Feel free to substitute the sprinkles for mini chocolate chips!
