Whether you want to more meatless meals in your weekly routine or are just looking for healthy family dinner inspiration, here are some our current Favorite Vegetarian Dinners that Meat-eaters will love!
OK lets be honest, sometimes when we hear the words vegetarian or meatless, we think salad or boring or strange faux meat products. But let me tell you friends, there is so much more to good vegetarian meatless meals.
As a mostly vegetarian living with 2 bacon loving meat eaters, I can attest that cooking these guys meatless can seem scary. I obviously want my toddler and hubs to like and enjoy dinner. So over time we have tried different recipes and landed on some of our current vegetarian dinner favorites!
From hearty soups to Mexican favorites, vegetarian dinners have never been 2 delicious!
One caveat! My toddler doesn’t eat every single one of these meals because lets be honest, she is still really picky. But she will pick out what she likes and I am OK with that for now. Her normal back up if she doesn’t’ like dinner is a cheesy omelet (another vegetarian fav!)

1. Tortellini Soup
This has become a new fav at our house! Brothy soup with perfect little cheesy tortellini and lots of good chopped up veggies. To make this vegetarian, add chickpeas or cannellini beans. Served with a little Parmesan cheese on top and hearty bread.
2. 4 ingredient Baked Gnocchi
In just 20 minutes, you have a mouth-watering ooey gooey Italian favorite! Totally kid friendly and perfect with a little garlic bread!
3. Mexican Quinoa Bake
A bowl of gooey Mexican goodness topped with lots of guacamole and a handful a chips makes this meal a vegetarian home-run! Super healthy, insanely easy, great for sharing and oh so delicious.
4. Broccoli and Cheese Wild Rice
Living in the land of wild rice, we love this hearty dinner. Think broccoli and wild rice meets mac and cheese.
5. Pineapple Cauliflower Fried Rice
A simple stir-fry with lots of veggies! This is a great recipe to make with or without the cauliflower. Using brown rice as a base also makes for a super nutritious meal, so get those chopsticks ready!
6. Veggie Cobb Salad
For a non-salad eater, this is one salad the hubs will eat! OK it’s his favorite salad. Loaded with fresh veggies, hard boiled eggs, homemade blue cheese dressing and homemade croutons you can’t go wrong.
7. Tortilla Española
Thinly fried potatoes layered in with yummy eggs makes for a great meatless dinner! Pair this Spanish favorite with bread, cheese and olives.
8. Cheesy Quinoa Stuffed Peppers
Soft cooked peppers stuffed with cheesy tex-mex spiced quinoa makes for a great dinner and even better work-lunch leftover! Don’t forget to pair it up with a little guacamole for good measure.
9. Broccoli Pesto Pasta
Anyone else love a big bowl of pasta!? If you do, this is the meatless meal for you! My family loves this meatless pasta and I love how much broccoli is in it! Win win!
10. Kimchi Avocado Quesadilla
A fun and easy way to eat kimchi! This has become a favorite dinner recipes on nights when we are tired and don’t really want to cook!
11. Chickpea Green Curry with homemade Naan
Green spiced curry dotted with chickpeas and potatoes served with fluffy homemade naan? A vegetarian dinner winner that is always a crowd-pleaser!
