Most people would agree that one of the best parts about Thanksgiving are the delicious leftovers. It’s really the type of meal that keeps on giving! But at the some time, it’s tricky eating the leftovers in creative different ways.
Well I’ve got you covered! Let’s talk leftover recipes! This is one of my favorite things to do, finding new ways to use really good leftovers. It’s not only delicious and cost effective but also a great way to reduce food waste!
Eating leftovers is not something to be ashamed of, if anything it’s something to revel in. You are eating perfectly good food in a creative manner while reducing waste. Nothing more admirable than that.

Got Turkey?
Hearty, healthy and total comfort food. This is a great way to use up left over turkey to feed a hungry crowd. Don’t forget the tortilla strips and avocado topping.
Leftover turkey, veggies, cheese and eggs. I simply add 1.5 cups of shredded turkey to this recipe! Doesn’t get simpler and more delicious than that!

A staple that must always be made with turkey leftovers. I’m more of a Turkey Bahn Mi girl while the hubs is more of a Turkey Cubano.

Mashed potatoes at our house are usually devoured shortly after thanksgiving. But if I’m lucky I can save 2 or so cups, to make these incredible Spinach and Cheese Potato Fritters! Cheese, buttery, soft, pillowy with a perfect pan fry. These fritters are amazing as a side or even for breakfast!
Got Cranberries or Cranberries Sauce
If you are like me, I somehow always buy 2 bags of fresh cranberries just in case. And every year I don’t use it! Ha! This cake is the solution. I love this cake so much! I have so many fond memories eating this cake for breakfast with coffee with family.
This is a yummy treat that my littles love! I like modifying this recipe and adding spinach, cauliflower, chia seeds, almond milk, and water. It is creamy, tart, sweet and delicious.
Cranberry Sauce topped Oatmeal or Plain Yogurt
The easiest fuss-free way to use up good cranberry sauce is to just scoop it onto oatmeal or yogurt.
