I am currently chilling in our basement which is half play gym for the girls and half Movie room. My toddler is running around in her Moana undies while playing with her alphabet flashcards. The hubs is working in the office. Baby Beany is sleeping and I’m munching on a one of these muffin.
I’m savoring this moment because 1. I bet baby will be up in 3 minutes. 2. My toddler successfully used the potty during her quiet time today! It’s happening! My kid won’t be in diapers forever!!!!
Man this parenting business is tricky. Everyday is a new challenge, big or small, still something to worry about. And of course with everything that seems to come up, we have no idea what we are doing. Our current parenting strategy involves trial and error mixed with asking our friends and Google.
Will it always feel this way? Just kinda lost? Ha, I hope not. My hope is that we will learn something and have an easier time with Beany. Let’s be honest though, our second child will likely bring new challenges that we have never dealt with 🤷♀️
So for all you parents out there, if you feel this way, I totally sympathize. We will just keep faking it til we make it! And at the end of the day, if our kids happy, healthy, fed and loved, I feel pretty good.
Alright time to talk baked goods. These muffins make any hard parenting day feel 1 million times better! I especially love surprising parent friends with a batch of these muffins because we end up eating, drinking coffee and venting about parenthood. Afterwards we always feel better. They are magical that way!
Moist and soft with a lovely inner crumb, these blueberry studded muffins are the perfect accompaniment for breakfast or snack. And that crisp sugar muffin top… OHH OHH… it’s so good you guys! Seriously the best blueberry muffins I have ever made.
I know we aren’t suppose to eat our feelings, but these blueberry muffins really do make the world feel a whole lot sweeter.

Yields 12 muffins
Ingredients
- 2 cups all-Purpose Flour
- 1/2 cup flax meal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 1 cups blueberries, fresh or frozen
- Thick demerara sugar to sprinkle over top (regular sugar works well too)
Instructions
- Preheat the oven to 375°F. Butter or grease a 12 muffin tin.
- In a large bowl whisk flour, flax meal, baking powder, baking soda, salt and cinnamon. In a separate bowl, mix the butter and sugar until creamy. Add the eggs, vanilla and buttermilk. Mix well.
- Mix the wet ingredients into the dry. Fold in the berries by hand.
- Scoop the batter into the prepared muffin cups (about 4 tablespoons) and sprinkle each muffin with a little thick sugar.
- Bake the muffins for 20 to 24 minutes, until an inserted toothpick comes out clean. Let muffins cool on a drying rack before devouring.
Notes
If you do not want to use flax meal, you can substitute 1/2 cup all-purpose flour. Frozen or fresh blueberries work great! I let these muffins sit on the counter in a sealed container for up to 3 days. Otherwise freeze in a ziploc freezer bag for up to 3 months. Thaw overnight.
