My toddler’s new favorite snack on hot summer days are my super creamy Berry Cauliflower Popsicles! Loaded with cauliflower, antioxidants and rich coconut milk, whats not to love!
Life has flown by lately. This is not at all abnormal for us, especially during summer time.
So far we have had 4 of 8 total guests this summer, taken 3 trips and are in the process of planning more family adventures. It’s all been fun, but I’ve been having a really hard time finding time to blog!
I admit, since both girls are sleeping through the night, I’ve become a real person again. That is a real person who sleeps! So I’ve struggled waking up before my early-rising girls. But every week is different and every week I try again.
Now this is not me complaining. Truthfully it’s more, I want my cake and want to eat it too. I don’t want to work while I am watching my girls, I don’t want to stop cooking for my family or clients, I don’t want to stop teaching tennis, I don’t want to have less house guests or take less trips. Yes it’s a lot right now, but that’s weirdly part of the fun!
This is definitely something I’m finally starting to learn with age. I use to think there was going to be this magical moment in my life when suddenly everything would work out and I’d have time for everything. But that’s not real life.
Things always come up. We are always working on something and that’s what makes life exciting. Yes I could do less. But I love what I do, so I’m going to keep doing it. Until I don’t love it anymore.

On the kid front, my girls are cuter than ever. Seriously they make everyday so special 😀 My almost walking Beany is finally taking to finger food. She hasn’t been the best eater of solid food so we are still taking it slow. She has been digging avocado toast lately eaten with a fork, giant fruit/veggies smoothies and anything her sister has.
And my sweet 3 year old Poppy is getting so big! Learning to dress and undress herself, learning table manners, and working on potty training, again! Since this is our 2nd attempt at potty training, I am not stressing. I know she will get it. And even if it takes a while, she won’t be in diapers forever.
Poppy is also boycotting almost all veggies, except for carrots. Thanks to this boycott, these Berry Cauliflower Popsicles were born!
Cauliflower is a great ingredient for smoothies and popsicles because it’s white, mild, easy to hide and provides a thick texture. In this recipe, the flavor of the tart berries and creamy rich coconut really shine, while the cauliflower provides thickness and nutrition.
It’s been 10 days and I’ve already made 4 batches of this. My kid has been eating 2 of these a day as a snack! Note our IKEA Popsicle molds are a little smaller than traditional at about 4oz each.
To make these delicious frozen treats, I normally cut up a large cauliflower into florets. Whatever I don’t use in the popsicle recipe, I freeze on a cookie sheet for an hour or so. Then transfer to a ziploc bag to be used in more popsicle or future smoothies. The rest of the ingredients are things like berries, yogurt, coconut milk and chia seeds. All the good stuff.
So with my freezer packed with Berry Cauliflower Popsicles and my calendar filled with lots of plans, I’m going to keep enjoying this summer for I’m lucky for the things I get to do and the wonderful people I get to share it all with.
Yields 12- 4 oz popsicles. Recipe can be cut in half.
Ingredients
- 1 cup cauliflower, cut into florets
- 1 cup coconut milk, full fat
- 1/2 cup Pomegranate juice
- 1/2 cup raspberries
- 2 tablespoons chia seeds
- 1 tablespoons maple syrup
Instructions
- Combine all the ingredients in a small sauce pan over high heat. Bring to a boil, then reduce to a simmer. Cook for about 10 minutes. Pour in a blender and pulse on high until completely smooth with zero chunks. Taste for sweetness.
- Pour into your popsicle molds and freeze for at least 3 hours before eating. Run popsicle mold under hot water to loosen and release.
Notes
Popsicles save in the freezer for up to 2 months.
