Although life is always busy, one of our main focuses as a family is to eat a wholesome varied diet every week. Here is our Busy Week Meal Plan (Nov week 1).
First and foremost, it is finally ELECTION DAY! Please please please go vote!!!!! Grab your friends, family, neighbors, enemy, kids, or just have a solo voting party, but please vote! It is an incredibly important election that will affect all of us and our kids. So please take the time.
And afterwards….. have a party! Grab a beer, make your favorite meal, grab some ice cream… treat yo’self because voting is a really big deal and you did it!
Over the last few weeks I’ve had a few of you reach out for weeknight dinner ideas. You know easy, healthy, family-friendly dinners that don’t take too long. So I thought it would be fun to start sharing what our weeknight dinner meal plan looks like. This will not be an every week post because I think that would get repetitive. But I do wish to share meals for different weeks to give you ideas of what we like cooking and eating!
Our weeknight meal plans always take in consideration how busy our week is, how much time we can actually spend cooking, if we have company, etc, etc. I also don’t buy super pricey or extravagant ingredients. Instead I deal shop, try to buy organic/grass fed as much as possible and make dinners simple.
We are a family of 4 with 2 “vegetarians” eaters and 2 meat eaters. Vegetarian is in quotes because I do eat fish and seafood occasionally and the my other non-meat eater, is 14 months. She is a vegetarian only because she has not tried meat yet haha!
For the most part I try to include the kids in our dinner plans. Usually my 3 year old will eat deconstructed version of our meal. So if we are having chili, she will eat the meat and some of the veggies. Or if we are having fajitas, she eats the chicken, cheese and tortilla separately. No more work for me!
Now looking at our week ahead, it’s a crazy one. It’s election day today, we have a bunch of doctors appointments (of course on the same week), celebrating the hub’s birthday, prepping for some upcoming travel, got yard work to do, lots of work, and the errands. So, meal this week need to be EASY!
MONDAY
Make ahead Pumpkin Chili topped with cheese, Greek yogurt and tortilla strips. Swapping sweet potato for the meat for me!
This is a twist on my easy classic chili with 3/4 cup of pumpkin. I worked Monday and had evening errands that had to get done, so this 30min dinner was a life saver.
Kids: Ground beef, tortilla strips, fruit and veggies.
TUESDAY ELECTION NIGHT
The [amazon text=B018INW2I8&asin=B018INW2I8]/Cauliflower wings (me) blue cheese dip and crunchy veggies.
This is the most involved meal to make all week only because you have to keep basting the wings. But we plan to cook and eat after the girls are off to bed and staying up late with drinks, food and election coverage.
Also throwing chicken in the crock pot in the morning before work for lunches and upcoming dinner.
Kids: Cheese, veggie, fruit and bread board.
WEDNESDAY
OUT for the hub’s bday dinner!
Can’t say what we are having because it’s a surprise 😉
Kid: Pasta night!
THURSDAY
Ginger Carrot Soup (vegan), bread and Cheesy egg cups (vegetarian)
Super duper easy to make, healthy, creamy and satisfying on cold days!
Kids: Same!
FRIDAY
Fridays for us are ALWAYS easy! So I’ll be using the shredded chicken that’s already made with veggies, kimchi (maybe), jalapenos, avocado, refried beans and cheese.
Kids: Chicken, tortillas, cheese, fruit and veggies.
WEEKEND
More birthday fun and a cheese/veggie/hummus/fruit board + popcorn movie night!
SNACKS
- Peanut butter stuffed dates
- Apples
- Cheese and crackers
- Yogurt
- Peanut butter monster cookies that I’m hoping to make with my 3 year old!
Bring it on week! We are ready!
