Hi guys,
So we made it thru week 1 of not leaving the house. Overall it went alright. Kids were good and their spirits were high. I know everyday will be different so still taking it 1 day at a time.
We are so fortunate the weather is fairly nice for us here in Minnesota because we can actually get outside to run around and burn off some energy.
This week will be a little nuttier with me conducting our at-home therapy for Poppy and working with our team remotely. Therefore, I’m relying on my meal plan to make dinner time less stressful, ensure I avoid food waste and keep making yummy healthy foods for my fam.
My aim this week is utilizing my fresh produce, cooking only from my pantry and making easy yet delicious recipes.
SUNDAY
Homemade pizza.
Using our favorite pizza dough recipe, store-bought Trader Joes pizza sauce from our pantry and whatever toppings we have.
MONDAY
Salmon, sauteed green beans and bread.
Simply cooked frozen salmon fillets and sheet pan roasted carrots and potatoes. I normally boil the carrots and potatoes for 5 minutes to soften then roast with olive oil, salt and garlic powder. Will probably slice up some bread (no knead bread made on the weekend) with butter too! Kids: one of my kids doesn’t like salmon, so she will likely get avocado instead.
TUESDAY
Arepas with spicy eggs.
Easy arepa recipe here. I use the baked recipe where you first cook on the stovetop then pop in the oven. And for the eggs, we cook up half a drained can of rotel on a skillet with a little olive oil for 5 min, then add eggs (about 4 for 2 people) and scramble on med-low heat. Eat arepas with eggs, cheese and avocado.
WEDNESDAY- DATE NIGHT
Chicken Tikka Masala and Homemade Naan
We have kept our weekly Wednesday date night after the kids go off to bed along with special dinners just for us (sorry children). This tikka masala is soul warming, calls for few ingredients and is simple to execute. We make our extra spicy and pair it with a good beer. I made the naan last week for another meal (since I needed to use up almost expired greek yogurt) and is frozen. Vegetarian twist on this tikka masala, I add potatoes and chickpeas. Kids: Buttery Pasta, veggies and fruit.
THURSDAY
Broccoli and Cheese Baked Potatoes
This is a 4 ingredient dinner! We cook whole potatoes (we do both yukon and sweet potatoes are our house), in the meantime I roast the broccoli in the oven for about 10-15 min at 400F.
I mix the broccoli with shredded cheddar, a little greek yogurt, garlic powder, salt/pepper and a splash of milk to combine. Scoop out a little potato meat and mix into the cheese mixture. Then re-stuff the potatoes and bake for 15 min.
FRIDAY
Burger take out!
In an effort to support our favorite local places, we are hoping to pick up take out burgers and fries!
