Breakfast is our favorite meal of the day and it’s normally the craziest. Here are our favorite weekday breakfast recipes in Real Life: What’s for breakfast?
Mornings with kids are CRAZY! Between trying to get ready yourself and getting them ready for school or daycare or class , it’s always nutso!
At the same time it is the hungriest meal at my house. Everyone is ALWAYS HANGRY for breakfast! And since we are ALWAYS in a hurry, I usually opt for these healthy simple recipes.
FIRST THING FIRST – Smoothie Time
The first thing my kids consume every single morning is a nutrient-packed smoothie! No matter what, we start our days with a smoothie. Packed with fruit, healthy fiber (flax or chia seeds), protein (nuts, yogurt, and/or hemp hearts) and veggies (spinach, kale, zucchini, cauliflower, carrot juice,etc), this daily smoothie is my favorite daily ritual!

SECOND – Healthy Breakfast Favorites
The way I think about breakfast is: how can I fill my kids up with healthy yummy foods that will keep them satiated and energized without loads of processed, fatty, sugary foods? Think oatmeal, fruit, yogurt, fruit and nuts.
In addition, breakfast needs to be fast, simple and/or preferably already made…AKA freezer friendly. This is why we adore make-ahead muffins, leftover pancakes and leftover breakfast cake!
Everyone at my house is pro-sweet breakfast, we rarely opt for savory. The trick to get my kids to eat a hearty breakfast is adding chocolate chips, making things in muffins form or calling anything “Torta” (cake in Spanish). If I do that, they will eat just about anything.
Flourless Pumpkin Oatmeal Muffins
I make these every week without fault. The kids ask for them almost every day, but I try to change things up. Each kid has 1-2 of them + smoothie + yogurt or applesauce and they are set for the day!
Healthy Zucchini Chocolate Muffins
As major chocoholics, these muffins are total winners! Super chocolaty yet made with whole wheat flour, no refined sugars and lots of zucchini.
These pancakes double as a favorite breakfast and dinner! These are the healthiest and easiest pancakes ever! 4 ingredients blended up and cooked. Done! BOOM! For a fun twist, I add a spoonful of peanut butter.
Bread, eggs and milk, ingredients we always have on hand! My kids love this meal because they get a little cup of maple syrup to dip into. It’s a mess but worth it!
Breakfast Cake or “TORTA!!”
This doesn’t sound very healthy, but think more coffee or fruity cakes instead of real cake. My kids love cakes… they really love cake. I usually make one on the weekend and they munch on it for 2-3 days!
Weekends Treats!!!!!
Saturday and Sunday are usually fun breakfast days. I will make something special one day and we will go out the other. Our all-time favorites include:
- Donuts and Pastries
- Buttermilk Waffles
- Sweet Rolls of any kind
- Fresh bread, bacon and eggs
- Buttermilk Pancakes
