How is it September already?! For an isolated surreal summer, it sure still went fast! Another short week calls for easy healthy dinners – Meal Plan Sept already!?
Getting my CSA box tomorrow with lots of root veggies, the last of the tomatoes and cucumbers and perhaps some new surprises. Another short busy week for us means I’m making quick mostly plant-based meals that hopefully everyone will like.
MONDAY
Homemade Pizza! Always a crowd pleaser. We had our 2 mini chefs make their own and the hubs and I split one with our fav veggies. Light on the cheese and apples/carrots on the side.
TUESDAY
BBQ Tofu and Roasted Root Vegetables with a Mustard vinaigrette – long name for a super easy dinner. Tofu is lightly spiced and coated with cornstarch then baked and douced with BBQ sauce. Potatoes, turnips, carrots, and peppers roasted ,and tossed in a mustard vinaigrette.
Kids: Crispy tofu without BBQ, roasted veggies and garlic bread on the side.
WEDNESDAY (date night 💕)
Thai lettuce wraps with Thai peanut sauce – Vegan Thai lettuce wraps with carrot/cucumber sticks and cabbage covered in a killer Thai peanut sauce.
Kid: Mac and cheese, veggies and chickpea blondies (recipe to come!)
THURSDAY
Coconut Curried Lentils and Rice – I’ll probably whip this up in the morning since our Thursdays starts early goes long. I love this hearty one bowl meal especially on nights where we have a lot going on.
Kids: quick fried rice and applesauce side.
FRIDAY

Baking
Spelt Vegan Banana Bread – first time making this recipe and LOVED it! So hearty and delicious. Kids adored it with a few chocolate chips on top. Definite keeper and great way to incorporate Spelt flour in our diet.
