School is starting which means extra hungry kiddos. I’m excited to share one of our favorite Healthy Kid Snacks: Chickpea Blondies.
This super healthy naturally sweetened snack has been a staple this summer! I don’t know about you guys, but my kids do not love pulses. So whatever way I can get them to eat them, I’m on board.
These Chickpea blondies are brilliant in my opinion. No eggs, milk butter or oil! Crazy right?! Just 7 simple ingredients blitzed in the blender and baked for 20min.
Texture for these chickpea blondies is soft and almost fudgy. They are not overly sweet and are super fun and easy for kiddos to eat.
My kiddos love to decorate and add their own toppings before baking. Usually chocolate chips and butterscotch chips! My personal fav is dark chocolate chunks and flaky salt.
Healthy, easy and loaded with chickpeas and peanut butter! What’s not to love!
8x8 inch pan
Ingredients
- 1/2 cup rolled oats
- 2 tbsp brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 15.5 oz chickpeas, rinsed and drained
- 1/3 cup maple syrup
- 1/4 cup natural peanut butter (the drippy kind), seed butter works here too*
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chip (regular or dairy free)
Instructions
- Heat oven to 350F. And grease an 8x8 baking dish or a 8 or 9inch cake pan and set aside.
- Place all oats, sugar, baking powder, and salt into a high speed blender or food processor and blend until it resembles flour. Pour out into the a bowl and set aside.
- Next blend the chickpeas, maple syrup, peanut butter and vanilla extract until batter is smooth.
- Scrape down sides to allow even blending.
- Spoon out mixture onto the baking dish and bake for 18-20 minutes. Sprinkle 1/4 cup chocolate chips over the top.

- Allow blondies to completely cool before cutting into them. This will help them firm up.
Notes
This recipe can be made vegan with dairy-free chocolate chips! You can also swap the nut butter for a seed butter if necessary. Topping can also be added in the batter after as the last step before pouring into the baking dish. In addition to chocolate chips, butterscotch chips, heath bits, or chopped nuts all work great!
