Nothing says spring like crisp and light Lemon Poppy Seed Biscotti and a lovely cup of tea! Citrusy and sweet, delicious and dunkable, these biscotti are a great spring treat!
I woke up this morning to find out it had snowed overnight! Um… it’s almost April! Which means spring right? Dang-it Minnesota spring!
Oh well! It may not look like spring outside, but it sure does smell like it in our house!
Yesterday we had friends over and the hubs smoked a turkey! Paired with fluffy cornbread, an asparagus tart (recipe coming soon) and Ina’s perfect roasted potatoes, it felt like Spring!
To add to the spring vibes, I made a little afternoon tea treat! Lemon Poppy Seed Biscotti with Lemon Glaze.
Lovely crisp citrus flavored biscotti, speckled with poppy seeds and topped with a light lemon glaze drizzle! A dainty sweet treat to enjoy with coffee or tea.
So yesterday while baby Beany slept, Poppy and I had a little “tea party.” Here was the set up:
- A cup o’ tea for mama, a sippy cup of hot chocolate for my toddler
- Both sitting in tiny chairs at her tiny toddler table.
- Stuffed animals propped up around us with their own cups
- Classical music playing in the background on Spotify (which was quickly changed to Moana at Poppy’s request)
- Lots of d ipping and crunching away at biscotti
- Crumbs everywhere and totally worth it!
It was pretty awesome. Not going to lie. It felt like I was having a date with my teenage daughter instead of my toddler. One of many mom-daughter tea biscotti dates 😍
Making a single or even double batch of these, is always fun because I end up sharing them with everyone! Neighbors, family, and mom friends. If I still have more leftover, I freeze them for another day. But usually between us eating them and sharing, we quickly polish them off!
So even though our coats are still hanging on our coat rack and our lawn is still white, I’ll keep spreading the spring vibes with my lemon poppy seed biscotti until warm sunshine and flowers return.
Yields Makes about 2 dozen (24) biscotti
Ingredients
- 6 tablespoons butter
- 2/3 cup granulated sugar
- 1/4 teaspoon salt
- 1 1/2 tablespoons lemon zest (roughly 2 lemons)
- 3/4 teaspoons almond extract
- 1-1/2 teaspoons baking powder
- 3 tablespoons freshly squeezed lemon juice
- 2 eggs
- 1-1/2 tablespoons poppy seeds
- 2 cups All-Purpose Flour
- 1/2 cup powdered sugar or confectioners sugar
- 3 teaspoons lemon juice
- 1 tablespoon milk or heavy whipping cream
Instructions
- Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
- In a medium bowl, beat the butter, sugar, salt, lemon zest, almond extract, and baking powder until smooth and creamy. (You can do this by hand, no mixer needed yay!)
- Beat in the lemon juice and eggs.
- Stir in poppy seeds. Then add in the flour and carefully stir until smooth. The dough will be sticky.
- Pour dough onto prepared baking sheets. With floured hands, shape dough into 2 logs about 3/4" thick, rounding the surface and edges with your hands. It’s OK if one log is longer than the other, as long as the thickness is similar to ensure even baking.
- Bake the dough for 22-25 minutes or until lightly browned. Remove from the oven and allow it to cool for 10 minutes. Then use a sharp knife or serrated knife to cut the log into even 3/4"- 1” slices. You can cut straight or diagonal for longer biscotti.
- Reduce the oven heat to 325°F.
- Set the biscotti on their side and transfer back to the oven to bake for an additional 10 minutes. At the 10-minute mark, flip the biscotti and bake for 10 more minutes. Allow to cool completely. Remove the biscotti from the oven, and transfer them to a rack to cool.
- To make the drizzle, whisk together the powered sugar, milk and lemon juice. Drizzle over the cooled biscotti with a spoon and leave until set.
Notes
Make sure to taste the glaze. Add more milk or lemon juice if you need to liquefy it a bit more. Biscotti will keep in an airtight container for 2 weeks. They can also be frozen for up to 3 months. Don’t forget to share with friends and neighbors! This is a lovely simple food gift that people LOVE.
