Get all your crispy, crunchy veggies ready to dip dip dip into my Cilantro Jalapeño Yogurt Dip! Herby, zingy, healthy and easy!
{Recipe Updated 8/14/19}: Doing a little family birthday for my little Beany who is turning 2 and will be forgoing the cooking all together! Instead we are going with an epic board with everything from bread, meat, cheese, nuts, fruit, veggies and a dip! And this Cilantro Jalapeno Yogurt Dip is a winner!
It’s 7:24am right now and my toddler is still sleeping? WHAT??!!?!? This is so strange, I don’t know what to do with myself, so naturally decided to chat about this Cilantro Jalapeño Yogurt Dip.
Today is going to be a fun day for us. We have a therapy free day which means, mama-daughter date followed by family date! It might sound lame but planning little outings are so special for us. Life is usually so busy with obligations and therapy so anytime we can fit in little dates it feels so special!
My Poppy and I plan to kick the day off at Rustica Bakery (closed so went to Rose Street Patisserie instead) with pastries, kids books and coffee. Followed up by a lake walk or run. For us this usually looks like Poppy finding every possible playground around the lake, then stopping at every little dock to look for ducks and throw twigs in the water.
In the afternoon she can do a little “quiet” time in her room which usually involves jumping on her bed and reading. Then we have a DIY Pizza and Nailed It (on Netflix) picnic party planned with the hubs. Not too shabby!
Alright back to this dip because it’s amazing! I originally made this dip for a veggie platter I brought to a party a while ago. It was a big hit so I’ve been making it ever since.
Best thing about this dip, is how EASY comes together.
In a food processor, mix up:
- A bunch of cilantro
- Green onions
- A jalapeno (seeds removed)
- Yogurt
- Lime juice and salt
The result is a supercharged herby dip that is delicious and healthy too! I love this dip with crisp veggies and pita chips. But honestly it’s good with empanadas, as a salad dressing, and over grilled meats, fish or potatoes .
It’s a great dip to bring add to your cheese/veggie board or even to bring on a road trip. Pack it up in a jar with a lid and bring a big bag of prepped veggies.
With the leftover Cilantro Jalapeno dip I have from earlier this week, I plan on making a little veggie board to go along with our pizza party tonight. Nothing like pizza, veggie and dip, and watching my toddler laugh her head off at baking failures. Should be a good night!
Yields 10 ounces of dip
Ingredients
- 1 cup plain yogurt (regular or Greek), about 8 ounces
- 1 small bunch of cilantro, roughly chopped
- 2 cloves of garlic
- 1 jalapeño pepper, seeds and veins removed, adjust to taste
- 2-3 scallions or green onion stalks
- 2 tablespoons of lime juice
- Salt and pepper to taste
Instructions
- Place the cilantro, jalapeño, garlic, green onions, and lime juice in a small food processor or blender. Pulse until the ingredients are chopped up
- Add the yogurt and mix until smooth. Add salt and pepper to taste and serve.
Notes
Dip saves for 4-5 days. If you want to use the dip as a dressing, add 2-3 tablespoons to thin it out.
