It is officially cabin season in Minnesota! Time to pack up the car, the kids and some easy good food for the weekend! Today I’m sharing Cabin Weekend Breakfast Ideas (Make ahead, Easy or No-Cook).
In Minnesota, “going up North” or “ weekend at the cabin” are 2 phrases you hear people say all summer. As an almost 9 year Minnesota transplant I’ve learned what these phrases mean – a summer weekend spent somewhere outside the city either near a lake or in the woods with family and friends enjoying nature, swimming, downtime, eating, drinking, playing games, building campfires, fishing, boating, hiking, and simply getting away!
Obviously I did not take me long to understand why Minnesotans love their summer weekends so much! Whether you are a fan of lakes or the woods, cabin weekends here are really about having a good time with the people around you. I get that and I totally dig it.
I’ve also learned that not every cabin is created equal when it comes to the kitchen set up. So meal planning requires a little thinking ahead. Which is why I’m sharing a list of mostly make-ahead meals for weekends away that will hopefully cover any cabin situation you encounter.
First off let’s talk breakfast! Sleeping in, and sipping coffee overlooking the lake deserves to be paired a yummy breakfast… it just does!
Breakfast at the lake should be casual and easy to eat. No fancy breakfasts that take a lot of time or equipment. Think more homey meals that everyone can enjoy without much prep or fuss.
1. Make Ahead
Cake and Muffins
As far as 100% make-ahead, breakfast cakes, loaves and muffins is where it’s at! The best thing is that you can make one of these recipes the day before and easily transport it. No need heat it up. Just serve it in the morning with yogurt and fruit and drinks. YUM!

- Morning Glory Muffins
- Coffeehouse Blueberry Muffins
- Banana Bread
- Lemon Yogurt Cake
- Coffee Cake
- Applesauce Yogurt Cake
Frittata or Egg Bake
Eggs are your friend on weekends away. Whipping up a frittata or egg bake loaded with veggies, meats and cheese is a power make ahead breakfast. Simply reheat in the morning and enjoy with bread and fruit.
2. Bring the Ingredients
Mix up the dry ingredients and pack in a container or baggie. Bring the wet ingredients separately and mix together before eating.
Got leftover bread from lunch sandwiches, make simple french toast for your crew. All you need is bread, eggs, a little milk, and syrup.
3. No Cook
Bread and Jam
A good loaf, good butter and good jam make a fabulous breakfast! Round it out with scrambled eggs and bacon.
Avocado Toast or Bagels
Smash the avocado on hearty bread and add on fun toppings like: everything seasoning, tomatoes, shaved cucumbers, fried egg, or even smoked salmon! OR bring a bag of good bagels for toasting and smearing!
Yogurt Parfaits
A great light and healthy breakfast. Make a little yogurt bar with both vanilla and plain yogurt, different berries/fruit, and granola.
Coffee!!!
Always make sure you have a coffee machine at the cabin, or bring one! Otherwise, if you are an iced coffee lover, brew a big batch at home and bring it with! Sometimes iced coffee is greatly appreciated especially on really hot weekends!
