Breakfast is the most important meal of the day right? Kick off your family’s day with super tasty and totally Healthy Oatmeal Chocolate Chip Muffins.
Breakfast is my favorite meal of the day. It’s the first thing I think about when I wake up and sometimes what I think about before bed!
I mean really, the possibilities are pretty much endless when it comes to breakfast. Bread, oatmeal, fruit, eggs, pastries, cereal, muffins…. All SO GOOD!
At the same time, breakfast powers your day, so it’s a good idea to get some good stuff in there too!
One of our favorite healthy ways to start the day is with oatmeal. But with temps in the 80s as we approach summer, a hot bowl of oatmeal doesn’t really sound that great right now. Plus my tot has decided she won’t eat oatmeal anymore. Everyday she has a new food arch nemesis… apparently.
That is until these little oatmeal loaded breakfast treats came along!

Loaded with oatmeal and whole wheat, these muffins are lightly sweet, filling, and spotted with chocolate chips! They are perfect for a work breakfast, for littles, or even travel (road trips or air travel)!
The hubs love these for work with a big mug of coffee and I love these early in the morning before the kids are up and I’m getting a little work done.
Especially in the summer months, I love popping these in the freezer and popping one in a Tupperware on my way out on errands. By the time I want to eat it, it’s nicely thawed and ready to eat! Or I thaw overnight and my Minions chomp on them for breakfast.
Don’t want to use chocolate chip, no problem. Swap for blueberries or dried cherries! These little oatmeal cups are super versatile.
I’ve made these little muffins about 6 times in the last month for my family and several friends. At this rate I get the feeling I’ll be making them all summer long. And I’m 100% OK with that!
Yields 12 muffins
Ingredients
- 1 1/2 cups quick oats
- 1 cup milk (I used unsweetened almond milk)
- 1/2 cup brown sugar, packed
- 2 tablespoons maple syrup (honey works too)
- 1/2 cup unsweetened applesauce
- 1 large egg
- 1 tablespoon oil
- 1 teaspoon vanilla extract
- 1/2 cup white whole wheat flour
- 2 tablespoons flax meal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup chocolate chips
Instructions
- Preheat oven to 400°F. Grease muffin pan or line with muffin liners.
- Place oats in a food processor or blender, and blend until chopped. Then combine milk and oats in a small bowl and soak for 20 minutes.
- In a medium bowl, mix in the brown sugar, maple syrup, apple sauce, vanilla, egg, and oil. Add in oatmeal to the wet mixture
- In another bowl combine whole wheat flour, salt, flax seed meal, baking powder, baking soda and whisk to combine. Add the wet ingredients into the dry ingredients and mix until just incorporated. Fold in ½ cup of the chocolate chips. Spoon batter into the muffin tin, and dot 2-3 chocolate chips on top of the muffins.
- Bake for 20-23 minutes. Cool on drying rack.
Notes
You can swap chocolate chips with blueberries, dried cherries or even nuts.
