It’s a long appointment filled week for us so I’m pulling all the stops on healthy super speedy meals! Let’s chat about our Super Speedy Week Meal Plan (Dec week 3).
Happy Monday everyone! Hope you had a lovely weekend! It’s 4:30am, I’ve got a kid that’s already been awake for a while and I am mentally preparing myself for a long week.
It’s one of those weeks where I’m just thinking, “how did everything fall on the same 5 days? Damn you universe!” Ha! Definitely a marathon week before a slower Christmas week.
With little time at home, meals this week are easy to prep, require little ingredients and for some, I’ve even done some prep work.
My prep work this weekend included:
- Slow Cooker Shredded Chicken – Used for toddler lunches and BBQ chicken sammie lunches.
- Pumpkin Spice Pancakes – For easy fast kiddo weekday breakfasts.
- Julia Turshen’s Coconut Curried Lentils – Whipped this up late Sunday night for Monday’s dinner.
- Carrots sticks chopped up for toddler lunch and snacks.
MONDAYM
Julia Turshen’s Coconut Curried Lentils with homemade naan.
Lentils I made ahead and naan I’ll whip up during nap time. I love this meal because you can make it in 25min ahead of time. And it reheats super fast.
Kids: Same. Shredded chicken as a back up.
TUESDAY
Emeril’s Fettucine Alfredo with Roasted Acorn Squash.
ONLY 4 ingredients in this killer dinner! Seriously, it’s so easy and fast and delicious. While pasta is cooking, I slice acorn squash at 400 degrees with brown sugar, olive oil, salt and a little maple syrup.
Kids: Same! The kids devour this pasta! Also mandatory bath because it’s so messy.
WEDNESDAY
Date night –Not cooking today!
Kid: breakfast for dinner! Make ahead biscuits, eggs & smoothie.
THURSDAY
Arepas with green chili eggs and avocado.
Arepas have become a favorite easy dinner around here. The girls love them, they cook in about 20min and I always have the ingredients for it. We like them the way my parents make them with spicy scrambled eggs cooked with rotel, smashed avocado and a bit of cheese.
Kids: Same with plain scrambled eggs.
Friday
Take out neighborhood Chinese food.
By the end of the week we will be completely beat and have still have bunch to do on Friday so it’s a take out kinda night!
Kids: Cheese, cracker, fruit board and popcorn night!
WEEKEND
Family Christmas this weekend 🎄
SNACKS
- Peanut butter stuffed dates
- Apples and bananas
- Greek yogurt pouches frozen!
- Leftover Christmas cookies
