It’s lunch time at the lake! You just spent the morning out in the water, everyone is tired, hungry and the kids are getting nap-time cranky. This is when good planning can make Lunch Time a breeze.
In today’s Cabin Weekend post, I broke down lunch ideas between Make-Ahead, Grillable or Assemble. All 3 categories help to ease the amount of time and labor involved with making lunch while on vacation and not in your own kitchen.
Similar to breakfast, I recommend thinking ahead and considering what cooking equipment you will have, if you want to bring things already made and realistically how much you want to cook.
Count how many lunches you need, decide what you want to make and write up your grocery list. Ready, set… GO!
1. Make Ahead
Soup and Chili
Soups and Chilis travel so well! They are the perfect make-ahead meals and quick to re-heat! Pair them with a chunk of bread or grilled cheese (made before serving)! And a hearty lunch is served.
Grain Salads and Pasta Salads
Quinoa, pasta, farro, brown rice are all amazing bases for veggies and a good vinaigrette! These salads are filling, travel well and make for amazing leftovers.
- Crunch Thai Chicken Salad
- Mexican Corn Salad with Chicken
- Greek Quinoa Salad
- Chickpea Panzanella with Chicken Meatballs and Tzatziki
Quinoa Casseroles
Casseroles are amazing make ahead meals. Simply pop them in the oven or individually heat up in the microwave.
- Mexican Quinoa Bake
- Broccoli and Cheese Quinoa Casserole (wild rice, brown rice or quinoa work here!)
Wrapped Sandwiches
Sandwiches are an amazing make-ahead option. Make the filling ahead of time. Stuff the sandwiches right before eating.
- Meatball Subs – Make the meatballs ahead of time, then top with good store-bought marinara, fresh mozzarella, assemble and broil for 3 minutes to melt cheese.
- Pan Bagnat (French tuna sandwiches) – A fun simple tuna sandwich without all the mayo of a traditional tuna sandwich.
Assemble
This is my favorite type of lunch while at the cabin because it’s customizable. Especially when there are picky kids present, having numerous toppings, options and sides to pick from, seems to please everyone!
- Sandwich Board – Sliced cheese, deli meats, lettuce, tomatoes, sprouts, avocado, pickles, condiments, hummus, and various types of sliced bread or wraps create an ideal sandwich board.
- Lettuce Wraps – Make the turkey, chicken or beef filling ahead of time and set it out with lettuce cups, sauces, crispy veggies, and peanuts as toppings.
- Bagel and Salmon Board – Lay out store-bought smoked salmon, cream cheese, sliced tomatoes and cucumbers, hard boiled eggs and sliced bagels. Let people make their own epic bagel sandwiches.
