Tasty, moist, healthy and pretty darn easy, my Baked Greek Chicken Meatballs are a delicious addition to your weeknight menu!

First let’s talk meatballs. These Greek Meatballs have become a staple at my house. A great made ahead meal and even freezer meals, wonderful for casual dinner parties and best paired with a Greek orzo or Greek quinoa salad, tzatziki and perhaps even pita or naan.
I’ve made these meatballs for new families too and it’s always a winner. They can be made with ground chicken or ground turkey and are equally delicious.
Now for trips. We have a trip coming up soon and are pretty darn excited! We haven’t done a whole lot of planning because you know… kids and life but we are getting to it!
Back from vacation and to real life. After a whirlwind 2 weeks, we are all finally home and it feels pretty nice!
Our adventure started with the girls down in hot Texas. We had a great time hanging out with family, eating good food, going to the pool and celebrating fathers day! I even got to go rock climbing for the first time, which I absolutely loved!
From there, I flew home for a few hours and then off again to an anniversary trip to Quebec with the hubs! Although it was day 5 or not sleeping, I was so excited for this trip that my vacation high was keeping me going strong!
Good news was that our second trip was kid-free …. WOOHOO! (thanks to the girls’ amazing grandparents). Our Quebecois adventure was magical. We spent a few days exploring, eating, relaxing, watching the world cup, and just enjoying each other’s company.
My favorite thing about this trip was that we got to really connect and talk to each other, like back when we were dating. I mean one of our dinners alone lasted 3 hours. Talking, eating, and exploring. It doesn’t get better than that!
Yes we missed our kids and I may or may not have spent a 3 hour train ride going through old baby photos and tearing up. BUT aside from that, we enjoyed being adults.
One major difference in our trips now as parents is our excitement to come home. Before kids, I never wanted vacations to end! The last few vacation days were mortifying because I didn’t want to get back to real life and my dreaded job. That is so different now.
Kid-free vacations are still exciting but by the last day we can’t wait to get home and see our kids. Personally I look forward to getting back to the job I adore. I like this feeling. It’s the best of both worlds.
Now that we are back, I’m excited to cook again! I love eating out but I always miss cooking! This week I’m excited to cook for family and a few SPS MEAL clients! One of the things I’m whipping up are these Baked Greek Chicken Meatballs!
These meatballs are super light, moist and tasty. With lots of onions, garlic and oregano, these little treats are amazing with my homemade tzatziki and Greek Quinoa Salad. I love this meal because it can be made ahead of time and travels really well!
I’ve made these for guests, brought them to friends homes for dinner and even made it for picnics. Seriously, you can’t go wrong with this meal, plus it’s totally healthy!
Serves 4 as a side
Ingredients
- 3 garlic cloves, minced
- 1 egg, lightly beaten
- 1/4 cup large yellow onion, minced
- 1/4 cup panko
- 1 ½ teaspoons dried oregano
- 1/4 teaspoon dried basil
- 1/2 teaspoon kosher salt
- Freshly ground pepper
- 1 pound ground chicken or ground Turkey
Instructions
- Preheat oven to 350º F. Lightly grease a baking pan with a little oil or cooking spray.
- In a bowl, combine garlic, egg, onion, breadcrumbs, oregano, basil, salt, and pepper. Add the ground chicken and stir just until combined. Try not to over-mix. Pop the bowl in the fridge for 10 minutes or so. This make it easier to roll meatballs.
- Roll small meatballs by hand and place on the prepared baking pan.
- Bake meatballs for 18 to 20 minutes, or until the internal temperature reaches 165º F.
- Serve with homemade Tzatziki sauce (search for the recipe on sweetpoppyseed.com.
Notes
Meatballs freeze well for up to 2 months. I love to serve this meal with my Greek Quinoa Salad and tzatziki sauce.
