Does anyone else go overboard when avocados are on sale? Avocados were 50 cents at my grocery store recently and somehow ended up with 8 avocados? What am I expecting an avocado shortage?
I can’t even help it. Every time I see avocados on sale, as in less than $1 I have to buy at least 2. I don’t know why but avocados are pretty magical if you ask me. Guacamole, Mexican food, avocado toast, smoothies, you name it.
Lately I’ve been digging making fruity avocado popsicles for my tot and 5 minute avocado cilantro dressing for my lunch salads!
Who know that avocados would be so incredible in salad dressing? The great thing about avocados in dressing is they make the dressing a pretty green, extra creamy and with a lovely mild flavor. Adding avocado to a dressing also makes it way more substantial, nutritious and filling.
For my 5 minute Avocado Cilantro Dressing, I throw together 5 simple ingredients (avocado, cilantro, olive oil, garlic and lemon juice) in my blender, press a button and PRESTO! Creamy dressing is ready.
No work, no chopping and almost no time at all. This 5 minute dressing is insanely delicious on raw veggie salads, roasted vegetables, garbanzo (chickpea) bean salad or even as a dip for veggies or crackers. It’s creamy with an almost guacamole quality that elevates any salad.
And for me it’s the perfect super fast hearty dressing for whatever leftovers I’m eating that day. Truly one of my favorite ways to eat avocados especially on busy weekdays.
So whether I have 1 or 10 avocados, this dressing is always one of the first things I make!
Ingredients
- half an avocado
- 3 tablespoons olive oil
- 1/4 cup water (add more or less to achieve desired consistency)
- 1/4 cup cilantro leaves and stems
- 1 small clove of garlic, peeled and smashed
- 1/2 teaspoon salt
- 1/2 tablespoon fresh lemon juice
Instructions
- Pulse or blend all ingredients in a food process or high powered blender. Add a tablespoon of water at a time to achieve the desired consistency.
- For dips I like keeping this on the thick side. For salad dressing, I make it thinner.
Notes
Dressing will keep in the fridge for 3 days.
