Bringing back a summer childhood favorite for my child and for me! Chewy Oatmeal Raisin Cookies are an old classic that I think we should eat more of.
It has been an interesting summer for us. Mainly because we have gotten a taste of summer time with a kid and without.
Right now we are experiencing kid-free summer! Part-ay-ay!!!! That’s right, we are living on the wild side without our little one this week. Yes we miss her, but at the same time we are taking advantage of our time to get a lot done and also have a lot of kid-free fun.
My first realization immediately after Poppy left, was the amount I can get done when she is not around. Recipe testing, writing posts, laundry, organizing multiple closets, cleaning, making dinner, running errands all in one day! If Poppy was here, this would likely take me a week! Not going to lie, it’s kind of nice to be able to complete task after task without getting interrupted 500 times.
The second focus during our kid-free time has been US. The hubs and I have really made an effort to spend quality time together talking about things other than our toddler, making dinner together, exploring our own city, and doing some of favorite activities that we seldom do anymore. And coincidentally it was our anniversary last weekend so that worked out nicely too 😍
So far we have been able enjoy some fancier dinner dates, enjoy mid-week pastry/coffee runs together, check out the new sculpture garden, watch some good flicks, hit up some local brewery/distilleries, plan spontaneous dates with friends, and just meander about town. I’d say that’s a pretty good use of our kid-free staycation.
On the flip side summer time with a speedy toddler has been a blast in a totally different way. This summer so far we have discovered SO MANY PARKS! Some parks even at places that I had visited countless times before but never noticed had a park. I was clearly very oblivious to kid things when I didn’t have a kid. And not only parks but outdoor family activities in general. Movies in the park, family fairs, parades, splash pads, water gun fights… all fun summer things we’ve enjoyed because of Poppy.
Watching our almost 2-year-old explore nature, feast on a piece of watermelon or simply stare at the big trees in our yard is enchanting. So to add to her magical summer of discover, I’ve been trying to introduce her to some fun summer classics that I loved as a kid.
One of her favs so far (other than ice cream) are these Oatmeal Raisin Cookies. Chewy, oatmeal packed and health-ish, especially for a cookie. I have to say this is probably my favorite childhood summer cookie! And it’s so fun to share it with my kid now.
These cookies come together in 15 minutes and bake for 10. Easy peasy! Plus they travel well since they don’t have chocolate. No risk of a melted chocolate mess! #mommywin
And don’t forget these chewy cookies are the ideal dessert or snack for sharing over the upcoming holiday weekend! I promise you will arrive with a big batch of cookies and go home with an empty container.
Cheers to summer time fun whether you have kids or not 🍻
Yields About 5 dozen. Recipe can easily be cut in half or doubled.
Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 tablespoon molasses
- 2 teaspoons vanilla extract
- 3/4 cups all-purpose flour (gluten free if desired)
- 2 1/4 cups quick-cooking oats (gluten free if desired)
- 1-1/2 teaspoons baking soda (gluten free if desired)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup each raisins
Instructions
- Line a cookie sheet with parchment or a silicone baking mat.
- In a large bowl, mix butter and sugars until light and fluffy. I used an electric mixer on medium speed for this step. Add the eggs, molasses and vanilla. Beat well.
- In a separate bowl combine the flour, oats, baking soda, cinnamon and salt. Gradually dry ingredients to butter mixture and mix well.
- Stir in the raisins.
- Spoon out the dough by large tablespoonfuls onto the prepared cookie sheets, leaving at least 2 inches between each cookie
- Bake at 350° for 9-10 minutes or until lightly browned. Cool on pans for 1 minutes before removing to wire racks.
Notes
You can easily add pecans and/or chocolate chips, about 3/4 cup each. These cookies are a perfect kid treat or great for a large crowd.
