Spring cleaning all weekend. Yay. That’s me trying to convince myself that cleaning is fun. Don’t get me wrong, I enjoy organizing and having a kept home but do not love cleaning. The only thing that got me through the weekend cleaning fest was a bunch of avocados sitting on my kitchen counter just ready to be stuffed.
Spring cleaning has never felt so real. We are preparing our house. Getting it spic and span and ready for the next lucky person or family. We are still trying to nail down our next house, but decided it’s time to start the cleaning process on our place to get it out there. It feels like our little house is getting ready for a hot first day. Getting cleaned up, pretty, polished and dressed up for someone new. Hopefully someone that will love this place as much as we have.
Normally I would start by cleaning out my closets and sorting through clothes but luckily my capsule wardrobes took care of that a few weeks back. Next up were plastic totes filled with tons of old souvenirs, photos, documents, notebooks and little mementos. These things no matter how small or seemingly insignificant are hard part with. Do I keep them for the memory or do I relive the memory one more time and then dispose of them to make room for new memories? It is really tough. Certain things like postcards from studying aboard or old train tickets and museum pamphlets I kept. I figure a few sheets of paper neatly organized is OK to keep, but maybe old tennis lesson receipts and college notebooks not some much.
Don’t even get me started on glassware. After sorting through boxes and boxes, we donated about 35 wine glasses and are still keeping about 20! We don’t even drink that much wine! No seriously… well at least we don’t anymore 😇Tons of old picture frames, posters, DVDs galore, vacuums, pillows… C’mon, how does one accumulate so much crap. This is the type of behavior I want to change. I know we will accumulate things throughout our lives but I’m going to try hard to always ask myself these 3 questions: is it worth saving? Will I use it in the future? Can I get rid of it to replace it with a new one?
Good news is that we are getting through everything. One by one. And as an easy cheesy reward, we made Cheesy Tuna Stuffed Avocados. To my delight, avocados were 50 cents each at the store! That’s right only 50 cents!!! Crazy right! So naturally I bought a whole bunch.
My favorite thing about this comfort meal is how insanely fast it is! Literally we took a break around 12:30 and were eating at 12:45! The kind of thing you can throw together at the drop of a hat without much effort. Now if you really want to get fancy, pair it with a homemade Margarita and good god your afternoon is made! Warning: the margarita might not inspire you to do much work after that but who cares.
The 2 main ingredients in this recipe are ripe avocados and a can of tuna. Now before you look down on this humble canned fish, just know that there are quality canned tunas out there that are good for you and caught in more sustainable ways. Yes it’s true (see this short informative canned tuna article). The best kind being Skipjack. It is more sustainable, not over-fished and poses lower risks in terms of mercury exposure compared to other types. Some of my favorite brands are Trader Joe’s Skipjack or [amazon text=Wild Planet Skipjack&asin=B001SB8AZC]. Both sustainably caught and delicious. You will notice the tuna is flakier and tastes way fresher than other brands. Also the cans are not packed with a bunch of water, but instead packed with lots of fish. So I urge you to spend the extra dollar or two for some better quality stuff which will make all the difference.

Cheesy Tuna Stuffed Avocados {gluten-free, vegetarian, low carb and paleo friendly}
Serving: Serves 2. Recipe doubles or triples easily.
*Notes: To make this recipe a bit healthier you can skip the mayo and do 4 tablespoons of yogurt. Inversely if you don’t have or don’t like plain Greek yogurt, feel free to use 4 tablespoons of mayo and skip the yogurt.
- 2 ripe avocados
- 1 can tuna drained, preferably Skipjack
- 3 tablespoons plain Greek yogurt*
- 1 tablespoon mayo*
- 1 tablespoon fresh lemon juice (lime works too!)
- Salt and pepper to taste
- Crushed red peppers (optional)
- 1 tablespoon minced green onions
- 1/2 cup shredded cheese, cheddar or a cheddar mix
Serve with tortilla chips. We love Trader Joe’s organic corn tortilla chips
Preheat oven to 350°F.Cut avocados in half. Slice a little tiny bit off the bottom of each avocado half so that each half will have a stable base. Remove the pits and discard.
Grab a spoon and scoop out a small spoonful of flesh, making the avocado “hole” slightly larger to allow for more stuffing. Place the scooped out excess avocado flesh into a medium bowl.
Mix tuna fish, Greek yogurt, mayo, lemon juice, green onions, salt and pepper to taste, and a pinch of crushed red pepper (if you want a little kick) into the medium bowl with the excess avocado.Stuff each avocado with the tuna mixture and bake in the oven for 5 minutes.
Remove from the oven and top each avocado with cheese. Try to press it down onto the tuna so it will stick. Switch the oven to broil (high) for 2-3 minute or until cheese is melted and golden. Sprinkle with more chopped green onions if desired.
Serve with tortilla chips.
