Spring is here! This means it’s time for easy fresh springy dinners. From breakfast to desserts, here are 11 Healthy Spring Recipes We Are Loving!
Summer is coming ahhhhhh!!!!!!!!! Can you believe it!? Are you ready? I’m not fully! Which is why I am going to enjoy the last bit of Spring and all it’s glory.
The last 2 weeks have been all about the daily grind (ABA Therapy and lots of extra work for the hubs), yard work and appointment/trip/event planning. I swear my days have consisted of booking appointments, planning get togethers/deliveries/lessons/trips/itineraries/recipes… on and on!
Luckily all this extra busy stuff has been fun 🙂
On the dinner front, we have been rocking simple spring dinners. Trying to get lots of veggies, less meat and lots of kid friendly foods! Also I am trying to do groceries less often, and cook a little less overall since we are spending much more time outside.
Here are the meals we have been digging lately!
Breakfast
I’ve been trying to get my kids to eat more eggs. And although scrambled eggs are sometimes devoured and sometimes not, french toast always go over well! My little Beany prefers hers with a tiny bowl a syrup so she can “dip dip dip dip.” Also this this recipe to use up dry old stale bread!
Our morning smoothie game is still going strong! And our new fav veg addition is zucchini. Simple washed and chopped, it’s amazing in smoothies because it blends totally smooth and doesn’t taste like anything. Along with mango, coconut water and avocado, this smoothie is tropical delicious and veggie packed! In the recipe link I swap almond milk for coconut water, skip the peptides and add hemp hearts, flax meal and 3 brazilian nuts instead!
3. Double Chocolate Zucchini Muffins
Another spring zucchini favorite! These lightly sweetened chocolate muffins are so yummy and healthy! My picky tots love them! They can be a little messy but totally worth the clean up. Personally I love them with some peanut butter and a big mug of coffee. Perfection!
Lunch
Another super fun way to eat leftover bread is crouton style! Since I’ve been making no knead bread for our Tuesday night board dinners, I always have leftover bread. Leftover bread is great kids’ french toast or for mama’s Spring Panzanella lunch! Normally I whip up croutons while the kids eat lunch and chop up whatever veggie I have in the fridge.
5. White Bean Hummus and Veggies
I’ve been trying to add more beans to our diet, and an easy way is with hummus! And not just any hummus, but white bean hummus! Creamier than chickpeas and super easy! Line up all the random veggies from the fridge and get your hummus dip on. I also love this spring meal because you can eat it anywhere: playground, car, work and even the airport!
6. Scrambled Egg Stuffed Sweet Potato
This sounds like a weird lunch but it’s super delicious and satisfying! On busy weeks a bake 2 sweet potatoes on the weekend. Then during the week, I whip up scrambled eggs, some for the girls, and some for me (with leftover veggies of course). Stuff it all in a soft sweet potato and scarf it down! This lunch is awesome on super hungry days or days when I’m really dragging.
Dinner
7. Salmon and Avocado Cucumber Salad
I’m always looking for ways to get more fish in our diet. On average we eat fish every other week. Salmon my favorite as well as Poppy’s!
This simple recipe is great with cajun seasoning or simply salt, pepper and lemon (especially for littles). The simple little salad brings the dish to the next level with creamy avocado and crunchy cucumbers. I normally serve this with roasted potatoes, good bread or cornbread.
It’s crazy how this roasted red pepper sauce is so different than tomato sauce. The flavor the pepper lends is rich and deep and delicious! Topped with parmesan cheese and served with some roasted broccoli and garlic bread, this dinner rocks!
9. Steak Sandwich and Homemade Blue Cheese Dressing
This is another home run dinner. The hubs loves it, my toddler devours steak like it’s candy and it’s easy to throw together. I take either leftover steak or very simply cook up a small steak (either skirt or venison is what we normally have on hand).
Meat is cooked in thin slices on a big hot cast iron along with sliced peppers and onions. The dressing is a mix of greek yogurt, blue cheese, a touch of vinegar and salt. Serve it up on crusty bread or panini style! So good!
My veg version usually involves cauliflower or tofu!
Dessert
This pie is amazing and surprisingly easy! I am not a great pie maker but this one is foolproof! Graham cracker crust made in the food processor and a easy delicious citrus and condensed milk filling make this pie perfect for spring or summer!
Our new favorite easy go-to dessert! Probably the easiest dessert in our repertoire! 6 ingredient poured and baked. Boom! A fabulous handheld dessert is served!
