Need an easy fool proof way to make pork this summer? Fire up the grill because we are making juicy tender Hawaiian Pork Skewers.
When you think skewers, what comes to mind?
I think of dinners outside on my parent’s patio chatting and laughing. Normally making fun of my sister or chuckling at my dad’s “dad jokes.” OR meals on our deck listening to music, sipping on homemade margaritas while soaking up some sun.
Ahhhhhh… summer time is almost here. No more pants and sweaters and cozy socks. I am ready to rock shorts, summer dresses and colorful aviators instead! Even if I’ll be rocking maternity clothes this summer… DON’T CARE. Summer can’t come soon enough.
To me, these Hawaiian Pork Skewers are summer! Why is it that putting meat and veggies on a stick makes it 100% better? It’s a mystery. A delicious juicy mystery.
The hubs and I were not huge pork chop eaters until we started making these skewers. Something about the tropical marinade lightly charred on the grill that brings out the best flavors in the pork. Basically if you think pork is boring, you have to try this recipe.
Along with the tender grilled pork are the veggies and pineapple. Charred bell peppers, onions and juicy pineapple make for an awesome compliment to the meat. Hawaiian inspired flavors on a stick really. What could be better? Ok maybe a nice margarita on the side? Or perhaps a cold beer?
Some more good news about these skewers, they are deceivingly easy and fast. Start with a 4 ingredient marinade… that’s right only 4 things! Let the pork sit for 20min-1hour. Skewer it all up. Grill for 14 minute total!

Serves 4
Ingredients
- 2 tablespoons brown sugar
- 2 tablespoons low-sodium soy sauce
- 3 tablespoon orange juice
- 3 cloves garlic, minced
- 2 teaspoons ginger, grated or ginger juice
- Dash of pepper
- 1 pound boneless pork chops, cut in 1 inch pieces
- 1 cup fresh pineapple cut in 1 inch pieces
- 1 bell pepper, cut in 1 inch pieces (orange, yellow or red)
- 1/2 red onion, cut in 1 inch pieces
- Vegetable cooking spray
Instructions
- Trim the fat from pork, and cut the pork into 8 (1-inch) cubes. Place pork in bowl or large zip-top heavy-duty plastic bag.
- Combine marinade and add to the pork. Cover bowl or seal the bag, and marinate in the refrigerator for 20 minutes - 1 hour max.
- If using wooden skewers, soak in warm water for 10 minutes.
- Set out all cut veggies, pineapple and skewers.
- Remove pork from bag. Thread 3-4 pork cubes, pineapple, onion and bell pepper pieces alternately onto each skewer.
- Heat grill to medium-high heat. Place skewers on grill rack coated with cooking spray, and cook 14 minutes or until done, turning frequently. Pork is done when it reaches an internal temperature of 145?F.
- Serve over rice, with a summer side salad, corn on the cob OR cornbread!
Notes
Canned pineapple can be substituted for fresh. Drain 1 (8-ounce) can unsweetened pineapple chunks. In this recipe I used half a red pepper and half a yellow peppers to make the skewers more colorful but you can use any 1 or 2 colors you’d like.
