My favorite to-go easy wholesome is trail mix. But not just any trail mix, Tart Cherry Walnut Trail Mix. A protein and omega-3 packed super snack!
It’s Friday! And what better way to celebrate than with a big batch of homemade trail mix.
If I’d have to pick my favorite snack that I can’t live without, trail mix would be it! I love the stuff!
What’s not to like? Nuts, dried fruit, coconut, and yummy seeds. Portable, healthy, energy boosting, protein-packed and perfect for trips. 100% customizable with everything from chocolate to pretzels.
Lately my favorite trail mix involves walnuts. This is a nut I don’t eat very often and it’s so darn good for you! Most trail mixes out there are almond heavy. Which is fine, but between almond milk, and almond butter, I eat plenty of almonds.
And I know, a recipe for trail mix might seem unnecessary when you can just buy a pre-made baggie at the store. BUT I promise, this is why better! Instead of stale nuts and fruit sitting in the package for who knows how long, use fresh nuts and fruit from the bulk aisle. It will taste infinitely better. Plus you get to make as much as you want for a lower price.
When I eat my trail mix?
- At the park while my kid dig dirt piles
- In my car on road trips
- As an afternoon snack during naptime
- On flights
- In front of my computer when I’m answering emails
- In bed sometimes while I’m reading (shhhh! Don’t tell the hubs)
Now that I’ve shared my passion for homemade trail mix, it won’t surprise you when I say that I made a big batch of my tart cherry walnut trail mix at like 6am this morning. Enough to fuel my week and an upcoming weekend road trip. You better believe I will be munching on nutty walnuts, tart cherries on the way to our family’s cabin and for lakeside snacks.
So next time you are at the store and get the munchies, skip the packaged stuff and pick up 5 simple bulk ingredients. Go home and make the best trail mix ever!
Yields Makes about 3.5 cups
Ingredients
- 1 cup walnuts
- 3/4 cup dried cherries
- 3/4 cup unsweetened coconut flakes
- 3/4 cup pumpkin seeds
- 3/4 cup banana chips
- 1/4 tsp sea salt
- Optional: 1/2 tsp cinnamon
Instructions
- Heat a pan on medium-high. Add coconut and toast for 2-3 minutes, mixing constantly. Be careful not to over toast the coconut as it can burn easily. Let coconut cool completely.
- Mix all ingredients in a large bowl.
- Store in a Ziploc bag or several mason jars. Or for portable easy eating, measure out 1/2 cup of the mix in snack baggies.
Notes
Trail mix will keep for up to 1 month in airtight container.
