Life is going over here. We are currently going through sleep regression struggles with our 20 month old. Struggles that have been going on for 2 months now!!! When will it end!
Our strong willed kiddo detests bed time. She truly fights it with all of her might. So we are trying our best to sleep train her but it has proven to be much more difficult than expected.
Some nights bed time happens in 15 minutes but others take over 1.5 hours! :-O And the bad nights include lots and lots of screaming. She will get it someday! Right?!
On the baby front, I have had a better week. HURRAY!!!! I am finally eating normal food (freaken finally!). I was getting a bit tired of brothy chicken soup and bread.
Plus I actually want to cook again! Which is good because it’s hard to write about food if I don’t want to cook it or eat it!
Our dinner meals lately have been all about easy and speed. Since I started attending workout classes 2 nights a week and teaching a Spanish class on another night, simple meals are a must. And at the same time, I’ve really been pushing myself to try new recipes instead of the same old standbys.
A new addition to our weeknight meals are Homemade Slow Cooker Sloppy Joes.
First off let me say that Sloppy Joes get a bad rap. I think most people associate this meal with those gross ManWich cans of mystery meat. But I’m here to tell you that a good homemade Sloppy Joe can be wholesome and actually quite delicious.
Start with some grass-fed beef or even turkey. Add a onions, peppers, tomato sauce, ketchup and a few condiments. Then let the slow cooker do the rest of the work. Serve up on soft buns with a side of roasted veggies, baked fries or pickles and dinner is served!
My favorite part of this meal is that it’s totally kid friendly and doesn’t even require silverware 😋
Exactly what we need on crazy busy week nights – a crowd pleasing dinner that is crazy easy, delicious and is simple to clean up!
Yields 5 Sloppy Joes
Ingredients
- 1 pound lean ground beef, ground turkey or ground venison
- 1/2 medium onion, finely chopped
- 1/2 medium red bell pepper, cored, seeded, and finely diced
- 12-ounce can tomato sauce or crushed tomatoes
- 1/3 cup ketchup
- 1.5 tablespoons packed brown sugar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dry ground mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 5 hamburger buns
Instructions
- Put all the ingredients (except the buns) in a slow cooker. Stir until well-combined, breaking up the beef as you mix.
- Cover the slow cooker with the lid and cook on low for 6-7 hours, or on high for 2.5 hours. Stir the mixture again.
- When ready to serve, check that the mixture is not too runny. If it is, strain with a slotted spoon. Scoop a good amount on each soft buttery buns.
- Enjoy with pickles and your favorite sides.
Notes
Recipe can be made overnight and then stored in the fridge until dinner time. Reheat in a pot. Store leftovers in an airtight container in the refrigerator for up to 4 days, or in the freezer for up to 3 months.
