This Sausage and Za’atar Vegetable Sheet Pan Dinner is the easy, mess-free and satisfying dinner you need after a long day at work!
Have you heard of sheet pan dinners or one pan dinners?
Basically all you need to know is they are = THE BEST THING EVER!
The sheet pan dinner equation is simple:
1 sheet pan + protein + side = Mess free delicious meal
Most sheet pan dinners take less than 40 minutes in the oven and about 10 minutes to prep. A dream recipe for stressful busy days when you don’t have the energy or patience to do much but still need to eat.
A favorite at our house for my meat eating hub and kiddo is sausage and veggies. For this particular recipe you can use pork sausage but we tend to stick with chicken to cut back on some of the fat. And veggies are interchangeable too! We love peppers, onions and potatoes to round out the meal.
To add a little extra pizzaz to this recipe, buy different flavored chicken sausages. Apple, green chile, Italian, jalapeno, spinach and feta are all good options to name a few. We normally go with everyone’s fav. Spinach and feta for me, green chile for the hubs and apple for the babes. Then we all share 😉
Add some fun condiments like ketchup or honey mustard for those dippers in your family and boom dinner is served with little to no effort! And if you are lucky enough to have leftovers, this makes a meal work leftover.
4 (adjust number of sausages for less people)
Ingredients
- 4 small red potatoes, chopped into 1/2 inch pieces
- 1 orange bell pepper, chopped into 1 inch pieces (red or yellow work as well)
- 1 small sweet onion, sliced
- 2 tablespoons Olive oil
- 1 teaspoon Za’atar spice blend
- 1/2 kosher salt
- 1/4 teaspoon ground pepper
- 3-4 large chicken sausages, uncooked*
Instructions
- Preheat oven to 400 degrees.
- Fill a pot with water and bring to a boil. Boil potato pieces for 6 minutes. You are looking for them to be slightly cooked. That way they will crisp up in the oven. Drain potatoes and lightly pat dry with paper towel. Place in a large bowl.
- Toss vegetables in the large bowl with olive oil and spices.
- Line a sheet pan with parchment paper or a silicone baking mat (yay for easy clean up).
- Spread vegetables evenly on sheet pan.
- Nestle sausages in the vegetables.
- Bake for 25-30 minutes or when sausages reach an internal temperature of 160?F degrees.
- Take out of the oven. Slice sausages.
- Serve with veggies and crusty buttered bread. Don't forget fun condiments (BBQ sauce, ranch, honey mustard) for those who love to dip the chicken sausage.
Notes
Depending on the size of the uncooked sausages and the number of people that will be eating (2-4 people), 3-4 sausages can be made with this recipe. For us, 2 adults and 1 toddler, we normally make 2-3 and will sometimes be left with leftovers which are perfect for a work lunch! Feel free to use any flavor sausage you like and/or pork sausage. Make sure the red potatoes are chopped on the smaller side so they cook all the way through.
