Who says tacos have to have meat to be amazing!? Roasted Cauliflower and Black Bean Tacos topped with avocado crema are a delicious meatless weeknight diner.
Our kid free days are numbered. Little poppy is on her way home soon YAY. And honestly it has been a very eye-opening experience.
I first have to say that I am really proud of us, all of us. I think we all made the best of our time without getting caught up in missing each other too much. Let me explain.
While our little one has stayed with family, the hubs and I have had some days to ourselves and have taken this as an opportunity to be productive and have fun doing kidless things. At the same time, Poppy is living it up with family in a new environment doing fun new things.
Big props to the hubs who got some much needed house projects done, got lots of bro hangout time, made some incredible dinners, and helped to plan some memorable dates 💕 He missed our little one of course, but didn’t let it ruin our free time.
My tiny tot deserves huge kuddos as well. This girly behaved beautifully with the grandparents. She was happy, ate well, slept well and had a blast. I truly believe this is a valuable life experience for my toddler to bond with her grandparents and learn to travel well. Growing up I remember traveling, spending time with my relatives and having a blast. I want that for my kid too!
And finally, ME. I did pretty well, surprisingly. I never cried so that’s a big plus. Did I miss my kid? Heck yea I did. But this was a really good opportunity to focus time on me, my hubs and the little sweet baby in my belly. I’ve spent a lot of time thinking about baby#2 and how life is going to change soon. This is a good thing 😍
Life will be very different in about 2 months. We will go from being a family of 3 to a family of 4. And you know what? I can’t wait! I know it’s going to be nuts at first and there will be days that will be overwhelming. But I’m cannot wait to open my heart to a new little baby.

In preparing for those first few nutty weeks when baby first arrives, I’ve been recipe testing super easy recipes that are healthy and delicious. Roasted Cauliflower and Black Bean Tacos is one of those super fast easy recipes we will eating a lot of because it satisfies our usual Mexican food cravings, takes 20 minutes to throw together, and can be made ahead of time.

Serves 4-6
Ingredients
- 1 medium head cauliflower (about 2-2 1/2 pounds)
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup cooked black bean
- 1 large ripe avocado.
- 1/2 cup Greek yogurt (substitute 1/4 cup canned full fat coconut milk for Dairy Free)
- Juice of 1 lime.
- Kosher salt and freshly ground black pepper
- ¼ pound purple or Savoy cabbage
- 1 carrot, cut in matchsticks
- 1 lime, juiced
- ½ teaspoon honey (adjust sweetness based on your preference)
- Fresh cilantro, roughly chopped
- 4 radishes, thinly sliced (optional garnish)
- 8-12 corn tortillas (gluten-free if desired)
Instructions
- Heat the oven to 425ºF.
- Cut cauliflower into small 1-inch florets. Place the cauliflower in a medium bowl, add olive oil, chili powder, garlic powder, cumin, salt and pepper.
- Arrange cauliflower on a rimmed baking sheet (you can line with parchment paper or a silicone baking mat for easy clean up). Spread cauliflower in an even layer and roast, stirring once halfway through, until the cauliflower is tender and starting to brown, 12 to 15 minutes. Remove from oven and mix cauliflower in a bowl with the black beans.
- Prepare the quick slaw by combining the cabbage, lime juice and honey. Season generously with salt and pepper and toss well.
- Slice the avocado in half and remove the pit. Using a food processor or by hand, scoop out the avocado flesh, add the yogurt, lime juice and a big pinch of salt and pepper. Process or mix with a fork until smooth.
- Spoon the beans and cauliflower onto the warmed tortillas. Top with the cabbage slaw, radishes and cilantro. Drizzle a bit of avocado crema on top.
Notes
Cauliflower and black bean mixture will save for 4-5 days in the fridge and make for fabulous leftovers. Avocado crema will keep for 2-3 days. To make this recipe Dairy Free, substitute Greek Yogurt for 1/4 cup canned full fat coconut milk in the avocado crema.
