These no-bake Peanut Butter Oatmeal Energy Balls are a favorite for our kids and us parents! They taste like peanut butter packed with fiber and protein!

Let 2016 begin. Personally I ended 2016 with a BANG. A food bang! Between the numerous family events, cookie exchanges and constant holiday excuse to stuff my face with cheese, bread and wine, I am excited for things to get back to normal. That’s the great thing about the holidays in my opinion. You get to make and eat your favorite dishes and share them with your friends and family.
Now that the holiday food frenzy is over, I want to make sure I have healthy snacks available within arm’s reach. I’m talking 1 arm because the other one is carrying heavy Miss Poppy. Peanut Butter Oatmeal Energy balls are just the ticket!
These tasty energy balls taste like raw peanut butter cookie dough and they are actually healthy! They will give you a fiber, antioxidants and omega-3s boost courtesy of the flax seeds and chia seeds. While the oats and the peanut butter provide protein, potassium and healthy fat.
Just throw all the ingredients into a bowl and use your hands to mix and ball’em up. Then off to the fridge. No baking required. The whole recipe will take you 10 minutes!
When hunger hits, I have 1 or 2 of these (OK somethings 3)… and I’m ready to tackle the day. Bring it 2016!
Yields Makes 20 balls (give or take a few depending on size)
Ingredients
- 1½ cups rolled oats
- 1/2 cup unsweetened coconut
- ½ teaspoon cinnamon
- 1 tablespoon chia seeds
- 1/4 cup ground flax seed
- ½ cup smooth natural peanut butter (or any nut butter)*
- 3 tablespoon honey or maple syrup
- 1 tsp vanilla extract
- 1/4-1/2 cup chocolate chips
- 2-4 tablespoon liquid (almond milk, milk, coconut milk,or water)
Instructions
- Add oats, flax seed, chia seeds, coconut and cinnamon to a large bowl. Mix it up.
- Add in nut butter, honey and vanilla extract. Stir with a spatula to combine.
- Add in chocolate chips and mix the dough. Dough will be slightly sticky but a bit crumbly.
- Add in liquid 1 tablespoon at a time. Mix by hand until you can form balls (by squeezing dough) that can hold together. If mixture is too dry, add in a little more liquid but not too much as balls will not hold together. Place peanut butter balls in a container with a lid/cover and cool in the fridge for at least 30 minutes. You can eat them at this point store in the freezer and eat straight fromfrom there.
- Enjoy straight out of the fridge.
Notes
The nut butter for this recipe needs to be drippy and wet, if not you may need to add a little extra liquid to mold balls. They store for week in the fridge or up to 3 in the freezer. You can eat them straight from the freezer because they don't ever get that hard.
