These No-Bake Chocolate Energy Balls are packed with oatmeal, chia seeds, flax seeds and creamy peanut butter. The perfect healthy snack that tastes like a fudgy treat!
I would like to confess to everyone reading this that I, Valerie Veronica, am a chocoholic. Sounds corny but it’s true. I’m addicted to chocolate! Good dark chocolate. Just give me a dark sea salt chocolate bar or fudgy dark chocolate brownies with some coffee or wine and I’m a happy camper.
I’d love to say I indulge in luscious chocolate every so often but I’d be lying. I have at least 1-2 square pieces of chocolate close to everyday. Antioxidants right? A piece of 72%+ cocao dark chocolate either with sea salt, cocoa nibs, almonds or plain, that’s my jam 🙌
But some days my chocolate cravings go a little nuts. I start by eating one square and then somehow am close to finishing the bar. Last night, for example, I started craving chocolate around 9:30pm and ended up eating half a bar by 10:30pm. And I’m pretty sure the only reason I stopped when I did was because I fell asleep. Wah wah…Sometimes I just want to stuff my face with chocolate. Chocolate party woohoooo 💃 But seeing as the hubs could not handle me after that much sugar and I don’t want to go bankrupt buying dark chocolate bars, I have a little trick to offset my craving. No-Bake Chocolate Energy Balls
Chocolaty, filling and naturally sweetened, these No-Bake Chocolate Energy Balls crush my chocolate cravings on the “OMG I need CHOCOLATE NOW” nights. Similar to my Peanut Butter Oatmeal Energy Balls, these little snacks are packed with protein from the nut butter, omega-3 fatty acids from the chia seeds and flax meal, and soluble fiber from the oats. So basically they taste like a naughty treat but are actually healthy little protein chocolate bites.
So if you are a chocolate addict like me and need a little help fighting the cravings, try these No-Bake Chocolate Energy Balls. Only problem is that they are kind of addicting too.
Makes about 15-20 depending on the size
Ingredients
- 1 cup old-fashioned oats (you can use GF if you want)
- 1/3 cup ground flax-seeds
- 1/4 unsweetened cocoa powder
- 1 tablespoon chia seeds
- 1/2 cup peanut butter or other nut butter*
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/3 cup mini chocolate chips**
- 1-3 tablespoon liquid if needed to form balls (almond milk, milk, coconut milk, or water)
Instructions
- Stir the dry ingredients in a bowl (oats, flax seed, cocoa and chia). Next in a small separate container mix the wet – peanut butter, honey and vanilla extract. Make sure wet ingredients are well mixed.
- Pour wet ingredients into the dry and mix it up. I like mixing it with my hands to check the texture.
- Last step is to add the chocolate chips and mix it all together. If the dough is too dry and crumbly, feel free to add a tablespoon of liquid. If not go ahead and roll up your balls.
- Place in a container in the fridge for at least 30 minutes and they will be ready to eat!
- Store in the refrigerator.
Notes
*Try to use natural drippy peanut butter if possible. Not the thick stuff or artificial stuff. Also feel free to substitute for your favorite nut butter: almond, cashew, sunflower, etc.
**Regular chocolate chip work fine. Although I like the mini ones because they are cuter. Carob chips work great too!
