Molasses Almond Butter Energy Balls are a dark, sweet and satisfying snack loaded with oatmeal, iron-packed molasses and almond butter!
Anyone else loving the winter Olympics???!! WOHOOOO!
For us the winter Olympics means lots of yelling “GO GO GO… LAND IT” at the TV, eating fun snacks, making cookies, staying up past our bedtime, and of course, nightly mock-biathlon competitions which involve fake skiing around our living room and shooting at targets with nerf-guns!

Before moving to Minnesota, I never watched the winter Olympics, just the summer. Not surprisingly, I didn’t feel a connection to the sports, the snow and the cold. But as a mid-western transplant with a real “uff-da” saying Minnesotan husband and babies, that has changed.
So far we have been LOVING the snowboarding (I mean seriously these kids are too cool for school), the speed skating, cross-country skiing, the moguls (who came up with this sport), and of course the biathlon (because skiing and target practice).
All the winter sports are pretty rad in my opinion! And it makes me want to learn how to do a winter sport! You know other than snow shoeing and snowball fighting. It’s never too late right? Maybe once the girls get a little older we can take up family cross country skiing. As long as there is hot chocolate afterwards, I think I can bribe my tot.
Now onto very important food things. MOLASSES ALMOND BUTTER ENERGY BALLS. These puppies are:

Energy balls are one of my favorite snacks, especially right now when I am always hungry due to pumping. They are loaded with oats and nuts and naturally sweetened. They are super easy to eat with one hand while carrying a baby, playing with a toddler and doing 400 other things. So WIN- WIN!
I am super into these energy balls in particular because…MOLASSES! Dark, sweet, syrupy molasses… mmm… taste like Christmas and winter and coziness.
Molasses is definitely the star in this recipe providing loads of flavor, dark delicious sweetness and iron, lots of iron. This is especially important if you don’t eat much meat like moi because it’s an easy way to add iron to my diet.
Next up, oats and almond butter. Both great snacking ingredients as they provide protein and keep me full longer. And then of course there are some other super ingredients like flax-seed meal, chia seeds, hemp hearts, coco nibs and good ole maple syrup. Plus these little guys are vegan, gluten-free and naturally sweetened.
These balls come together in about 5 minutes, and can be made while carrying baby and having a toddler pulling your leg because she wants you to play the Sing Soundtrack.

Ingredients
- 1 cup old fashioned oats (gluten-free if desired)
- 1/2 cup flax meal
- 1 tablespoon chia seeds
- 1/2 teaspoon cinnamon
- ¼ teaspoon ground ginger
- 2/3 cup almond butter (any nut butter works)
- 3 tablespoons blackstrap molasses
- 3 tablespoons pure maple syrup
- 1/3 cocoa nibs (optional)
Instructions
- In a large bowl, stir together the dry ingredients. Then mix in the wet ingredients and stir until well combined.
- Roll into 12-15 bite size balls using your hands.
- Store in a sealed container in the fridge.
Notes
These save in the fridge for 2 weeks. Mini chocolate chips can be substituted for the cocoa nibs or omitted all together if vegan.
