We have a busy but good week ahead. Keeping all our dinners mostly plant-based on a hot week – Meal Plan Aug wk 4 2020.
Here is a quick peak at our meals for the week. I am aiming to finish our CSA box goodies from last week (including tomatoes, zucchini, and cabbage).
MONDAY
Spicy tomatoes with lentils and No Knead bread– we are skipping the egg and cheese, swapping for some baked tofu.
Kids: no knead bread, crispy tofu, veggies and fruit.
TUESDAY
Peanut Thai Noodles– plant based and delicious!
Kids: Noodles and peanuts with chop sticks for extra messy fun! Peppers, carrots and fruit.
WEDNESDAY
Greek Wraps – trying a version of this recipe with the ingredients I have available!
Kid: Fun snack board night. Popcorn, fruit, veggies, nuts, and other yummy treats
THURSDAY
Fish tacos with slaw. This is our non-plant based meal for the week as we have some fresh lake fish to eat up.
Kids: Same with fruit and veg!
