One of my favorite ways to eat butternut squash is Maple Butternut Squash Baked Fries! Slightly sweet with deliciously golden crisp exterior, perfect for dipping in yummy ketchup!
For all the squash hater out there or people that are not quite sure how to cook with squash, this is the recipe for you!
I love butternut squash in all it’s different shapes and forms. But one of my all time favorite ways to make it and eat it is roasted. Sliced thin like french friends, roasted butternut squash develops the best flavor.
Slightly sweet yet tender crisp and ideal for dipping in condiments like ketchup! In my book, anything dipped in ketchup is a winner!
Normally I slice up half a large butternut squash or a whole small one into fries. Then I bake them with olive oil, maple syrup and good old salt. Pop them in the oven until browned and crispy. Then I’m left with healthy delicious squash fries that make the easiest lunch side, afternoon snack or healthy toddler dinner side.
Added bonus with these baked squash fries is that they boast beta carotene, alpha carotene, and vitamin C, giving a boost to the immune system.
So whether you are a squash lover or not, you will love these super easy and totally addicting butternut squash fries! Trust me, they are THAT good.
Makes enough for 2-3 side portions
Ingredients
- 1/2 butternut squash (about 2-3 cups)
- 1 tablespoon maple syrup
- 1 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Preheat oven to 425°F.
- Peel the squash.
- Cut the butternut squash in half and de-seed it with a spoon.
- Cut it up into french fry shapes. Try to make the pieces similar in size so they will cook evenly.
- Toss squash fries in a large bowl with the maple syrup, salt and oil.
- Spray a cookie sheet with non-stick cooking spray. Spread out squash fries in an even layer.
- Bake for 25-35 minutes, flipping halfway through baking process, and checking ever 5 minutes after the 25 minute mark. Fries are done when they are starting to brown on the edges and get crispy.
- Serve with ketchup just like regular fries!
Notes
Butternut Squash Fries save in the fridge for 5 days. To cut back on the sugar, simply omit the maple syrup. Another option is to swap the syrup for parmesan cheese.
