Nothing brightens up a blah day like these Lime-Coconut Ice Cream Cookie Sandwiches. Summery, cool, chewy, creamy, drippy! AMAZINGNESS!
Monday! Yay! Reasons for a “Yay” on a Monday are: 1. One day closer to getting our bathroom tile finished & having the house to myself. 2. One day closer to having a healthy kid. 3. Lime Coconut Ice Cream Cookie Sandwiches all week long woot woot!
As you know we are renovating our master bath. When we moved into our house, the master shower had a leak. The type of leak that if you took a shower, it would leak into a closet on the lower floor. Yea not good. Needless to say this was project #1.
Oh and also, it was 70s lime green. NO thanks.
At this point we have tiled shower floor, tiled bathroom floor and sheet rocked walls. This week, tile man will be tackling the rest of the tile, walls and grout. WOOOT WOOT! Then it is vanity, shower doors, toilet etc! YAAASS!
And it means, no more nap interruptions for my little one. No more construction noises during the day. No more dust everywhere! And we can move back into our bedroom! Soon soon soon.
So baby P has been sick. Sadness. A sick kid is the saddest thing ever! They can’t tell you what’s wrong and you want nothing more than to help them. She is slowly getting better but still not herself. Not eating much, very slow and Eeyore-like.
Poor baby. But it is Monday and she is feeling a little better every day.
With all of this, the hubs and I needed something to cheer us up. Food of course. Nothing cheers me up more than something sweet.
This summer I have been constantly dreaming of ice cream cookie sandwiches. The ultimate fun refreshing and kid friendly snack. Although my kid is too young to enjoy them, I sure am. And they make me feel like a kid again.
Today I went with a more tropical refreshing combo. Lime – Coconut. These are such quintessential summer vacation flavors. Chewy, sweet and slightly tangy lime sugar cookies. Stuffed with the creamiest dreamiest Italian Coconut gelato. Rolled in toasted coconut. MAGIC!
So yea it is Monday, but life is pretty good! We are having green chicken curry for dinner, my baby girl is starting to feel better, we are one day closer to having a master bath, and this Lime-Coconut Ice Cream Sandwiches.. BOOM! Life is good.
Yields 18 cookie sandwiches
Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- Zest of 2 large lime
- 4 tbsp lime juice
- 1 pint coconut gelato (I used Talenti)
- 1 cup coconut, toasted (optional)
Instructions
- Preheat oven to 350 degrees. Line cookie sheets with silicone mat or parchment paper.
- In a small bowl, stir together flour, baking soda, baking powder and salt.
- Using a mixer, beat together the butter and sugar until smooth and fluffy. Beat in egg, vanilla extract, lime juice and lime zest.
- Gradually blend in the dry ingredients.
- Scoop cookie dough onto prepared cookie sheet about tablespoon and a half for each cookie, 2 inches apart. Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet two minutes before removing to cool on wire racks before stuffing.
- While cookies cool, toast coconut on a skillet over medium heat for 4-6 minutes or until lightly golden brown and fragrant.
- Take a large scoop of gelato or ice cream and sandwich it between two cookies. Roll the sides in in the toasted coconut! Freeze the sandwiches until ready to eat. I like to pop them into the freezer before dinner and then eating them about 2 hours later.
Notes
I love using Minneapolis based Talenti coconut gelato. But good creamy ice cream would be incredible too!
The baked cookies stay fresh covered at room temperature for up to 1 week. You can make the cookie dough and chill it in the refrigerator for up to 4 days. Allow to come to room temperature and then bake. Baked cookies freeze well for up to three months. Unbaked cookie dough balls freeze well - up to three months. Bake frozen cookie dough balls for an extra minute or 2, no need to thaw.
