Is it possible to make good lunch in 5 minutes? Oh yes it is! Lately I’ve been living on my 5 Minute Hummus and Cucumber Lunch Sandwich.
As you all know, we are in full crazy mode right now. With a hyperactive toddler and a tiny hungry fussy infant, life is NUTS to say the least.
We are keeping each day as simple as possible:
- Feed baby
- Feed/entertain toddler
- Find time to sleeping
- Find time to eat
That’s it. Nothing more. Just keeping the kids healthy and happy while trying to keep our zombie selves sane and functioning.
Since I’m breastfeeding and basically always hungry and thirsty, my go-to lunch lately is this delicious totally portable 5 minute hummus and cucumber lunch sandwich!
Seriously guys, this sandwich takes 5 whole minutes! Which is pretty much all the time I have most days. And I can eat it with my hands, siting on the couch or standing or anywhere I need to be. except the table of course because who eats at a table with an infant and a toddler controlling your life?!
Here’s the breakdown:

Crunchy hydrating cucumber
Peppery crisp arugula (or spinach)
Crushed red peppers and [amazon text=Za’atar (Mediterranean spice)&asin=B06XCNXMH6]
4 minutes to make the sandwich and 1 minute to pick a fun side or 2… and BOOM done! 5 minutes flat!
My fav sides lately include, salt & vinegar Kettle chips, a banana, watermelon, trail mix, a breakfast cookie, or a granola bar. All easy healthy things to eat in a hurry and keep me full for a few hours.
This sammie is vegan, can be made with gluten free bread, and is dairy free. But you can add more if you want! The hubs loves adding shredded chicken, turkey and/or cheese. You can also add tofu, a fried egg, or a hard boiled egg. And of course you can add different veggies if you’ve got them! Also play around with the bread, this sammie on a bagel would be delicious too!
Ingredients
- 2 slices Multi Grain bread (gluten-free if desired)
- 2 tablespoons hummus* (I used plain)
- 8-10 thin slices cucumber
- Handful of arugula
- Pinch of crushed red peppers
- Pinch of Za’atar (optional)
- Kettle chips
- Veggie chips
- Pretzels
- Fruit
- Carrots
- Trail mix
- Apple and peanut butter
- Granola bar
Instructions
- Toast bread in a toaster.
- Spread hummus on one side of each bread slice. Add cucumber slices over one slice with hummus, and crushed red pepper and za’atar to the other hummus slice. Pack with arugula and close sandwich.
- Serve with a side or 2.
Notes
This sandwich is best eaten right away. You can add extra protein if you'd like including shredded chicken, turkey, cheese, tofu, hard boiled eggs or a fried egg. Avocado and other crisp veggies like carrots and peppers are also great in this sammmie. Also play around with the bread, this sammie on a bagel is delicious too!
