I love desserts. I love sweet. Ok I just love sugar. Yes I do. My general approach to life is, eat healthy well-balanced meals with whole real ingredients so that I can indulge in dessert.
Do I have something sweet or dessert-like every night? Why yes I do. And you know what, I blame my dad. Sorry dad but this insatiable sweet tooth of mine is totally your fault.
Call it genetics or a learned habit but I definitely have my dad’s sweet tooth times two. Growing up (and to this day) my dad always has coffee and dessert after dinner and sometimes lunch. And let me clarify, we are not talking ice cream and store-bought cookies. I’m talking homemade dessert, cakes, flan, pies, you name it, made by my awesome mom.
I remember nights when we happened to be out of dessert (which was rare) and dad would drive to a local bakery to pick up a yummy baked treat. Can’t have dinner without dessert! So naturally I inherited his love of sweets.
Now as an adult-ish when we need a super fast and easy sweet treat, I think cookie. And whats even easier than that? Bar cookies. Heath Blondie Bars to be exact. Simple, homemade, chocolatey and sweet, the perfect chewy comfort food dessert to quench any sweet tooth. Just throw the ingredients together, pour in a pan and bake. Done. Boom. Sugar. YES.
Heath Bar Blondies {last-minute Super Bowl treat}

Serving: 8 larger pieces, 16 smaller pieces.
*Notes: I have made these with leftover Halloween or Valentine’s Day candy and they are phenomenal. Just crumble chocolate candy like Reese’s cups or Twix. Of course chocolate chips work too! Trust me you can’t go wrong.
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup light brown sugar
- 1/3 cup unsalted butter, melted
- 1 tablespoon vanilla extract
- 1 egg
- 1 cups crumbled up heath bar*
- 1/2 cup chocolate chips (optional)
Directions:
Prepare an 8-inch baking pan with aluminum foil, leaving a little extra foil as overhang on the sides. This will help to lift the finished blondies out. You can also spray the pan with cooking oil.
In a medium bowl, mix together flour, baking powder, baking soda, and salt.
In a separate bowl, whisk together the melted butter, brown sugar, and vanilla. Next add the egg and mix well.
Add the dry ingredients into the bowl with the wet. Stir until combined. Fold in the heath pieces and chocolate chips.
Spread evenly into prepared baking pan. Don’t worry if the batter looks thick. Thick = chewy and gooey.
Bake for 23-26 minutes or until lightly browned on top. Allow blondies to cool before cutting and eating.
