Whether you are on the Whole30 train, or just trying to enjoy a healthy lifestyle, start by fueling your morning with this refreshing Grapefruit Avocado Salad.
Until recently I didn’t know what this Whole30 business was. But after talking to a few friend and doing some research, I found out it’s a really big deal right now. Shout out to my peeps going strong in January!
Basically Whole30 is a 30 day program (duh) where you eliminate all “hormone-unbalancing, gut-disrupting, inflammatory food groups” including grains, sugar, dairy, alcohol, and legumes. The program promises to help your carb and sugar cravings and ultimately teach you to enjoy whole, clean, simple foods that fuel your body.
Seems interesting and rather hard. But for those giving it a go, it is just 30 days! You can do it!
Here is my contribution to your cause.
Grapefruit Avocado Salad
Since it’s citrus season, I’m beyond excited to dive into a ruby red out of this world juicy grapefruit.
Before you give me a pouty face, note that not all grapefruits are bitter. If you have ever tried strore bought grapefruit juice, THAT IS NOT WHAT A GRAPEFRUIT TASTE LIKE.
A perfectly ripe grapefruit is sweet and tangy, beautifully ruby red and so aromatic. When picking one, go for the grapefruits that have small irregular patches of gray-brown on their peels. These spots or markings are a sign of sweetness. And of course give it a gentle squeeze, make sure its firm, heavy but has a little give.
Now that you have your perfect grapefruit, pick a lovely avocado that is just ripe. Peel and segment the grapefruit, slice the avocado and drizzle a light simple vinaigrette.
It sounds and look so simple but honestly this flavor combo of avocado and grapefruit is hard to describe. Its just MAGIC.
To make this a well-rounded and filling Whole30 breakfast serve this up for breakfast with 2 hardboiled eggs or bacon. DELISH!
Otherwise if you are not eliminating carbs, serve the salad alongside a lightly buttered slice of sourdough bread. AMAZEBALLS!
Want to make it for a crowd? Triple all of the ingredients and share this lovely salad as a side.
Ingredients
- 1 grapefruit, peeled, segmented and seeds removed
- 1 avocado, peeled and sliced
- 1/2 tablespoon shallot, minced
- 1 tablepsoon lemon juice
- 1/4 olive oil
- 1/4 salt
- Freshly ground pepper
- Optional Side: 2 hard boiled eggs ( Method here )
Instructions
- In a small mason jar (with lid), shake up the vinaigrette ingredients. You can also whisk them together in a small bow.
- To peel and segment the grapefruit, refer to these instructions.
- Arrange avocado and grapefruit slices on a plate and spoon dressing over the salad.
