Friday old friend, how I’ve missed you. It has been a week. A long one. But I am giving myself major props, and several little mini celebrations with wine and chocolate and morning pancakes for getting through it.
During the day, baby and I are the home selling general contracting dynamic duo scheduling appointments, overseeing work, cleaning, organizing, and crawling/standing (that’s mostly Poppy). And in the afternoon, our third team member, the hubs, handles more paperwork, handiwork and trips to Home Depot after a long day of work.
Today is the big day though.Our house will be on the market by tonight. YAY! Now we just have to keep the house looking good for showings. This will be a bit of a challenge with a mobile messy baby but we can do it! I’m anticipating lots of coffee.
Food-wise, easy mess-free meals have been ruling the kitchen. Since our kitchen looks the cleanest it ever has, I am trying to keep cooking messes to a minimum if possible. And if you know me, I am going to cook no matter what situation I am in. So, this has meant: Avocado Pesto Pasta, homemade Calzones (with frozen dough the hubs made last week), Broccoli & Cheese Frittata with baguette, Cobb salad and Quesadillas. Left over frozen meals have really helped up in a pinch. Yay freezer!
We did however have a family date night Monday to celebrate our progress and the new house. Lyn 65 baby! Woohoo! If you have not been there, I would HIGHLY recommend it. Lovely atmosphere, killer cocktails, fabulous food and best for us, it’s 3 minutes from our house. I am in love with their creative wood fire pizzas, my latest with radicchio, a soft cooked egg, arugula, citrus and avocado, and the hubs gets their burger, rated one of the best in Minneapolis. Also phenomenal is the fried chicken, truly heavenly.
Alright in other news, the weather is starting to warm up. YES FINALLY! And I am excited for what that means. Picnics, walks, runs, park-time, hikes, and tennis! Yes tennis. I am happy to announce that I will be going back to my roots and teaching tennis again this summer! Lessons for kids and adults (one on one and group lessons). I sometimes miss my days at The Woodlands Country Club as a Tennis Pro and I am excited to start teaching again! Making food for people and coaching tennis are two things are truly love. Tennis is the sport I grew up on and it’s a fun social lifetime game that anyone can do with a little practice and guidance.
I am currently working on finalizing more information on the tennis lessons via social media, the blog and other online outlets.
