Just because your little ones can’t partake in the Halloween candy gorging doesn’t mean they can’t enjoy a healthy spooky treat. My tot’s favorite are these Franken-Smoothie Mini Bowls!
Even though I am not the biggest fan of Halloween, I do love the candy. If you have kids (or even if you don’t), you are bound to indulge in some Halloween candy. Personally I always end up buying candy and chocolate, which is I say is for trick or treaters, but end up in my belly. Every year, it happens without fault.
Now that I have a tiny toddler without all her teeth, I realize she has it bad because won’t get to indulge in the awesomeness of this candy crazy holiday.
Luckily there is another side to Halloween. The cutesy side. The side that says it’s OK to eat food in the shape of mummies or witches hats or spiders. And of course the side that encourages little kids to run around in the most adorable costumes ever for most of the month.
So today, as a trade-off, I’m making my Poppy a Halloween treat that is toddler size, delicious, healthy and halloween-y.
FRAANNKKEENN-SMOOOOTHIE MINI BOWLS
It might look green, but these little Franken-Smoothie Mini Bowls are absolutely scrumptious! They taste like froyo, are naturally sweetened and from the sight of Poppy eating one, they seem to taste like liquid candy too!
Each little cup is packed with spinach, bananas and mango! So easy and so fun! Whip it all together and the result is a cup of green sweet goodness!
And I must admit, even though I made these Franken-Smoothie Cups for Poppy, the hubs and I have been eating them as a snack too! SO GOOD! Totes adult-approved.
Franken-Smoothie Mini Bowls {Baby & toddler friendly}
(Naturally sweetened, gluten free & vegan)
Serves 3 (4 ounce) jars or 2 (8 ounce) mason jars for bigger portions.
Notes: Smoothie mini bowls can be made an hour in advance and stored in the freezer. I would not make them the day before as the banana may get a bit funky tasting and the smoothie will harden completely and loose it’s smooth texture. This recipe works best with a high powered blender. However a regular blender will work too, you just may need to add a bit more liquid (closer to the 1/2 cup of milk).
- 1 frozen banana, peeled
- 2 cups spinach, loosely packed
- 1 cup mango (I used frozen mango)
- 1/4 – 1/2 cup milk (depending on how powerful your blender is)
- Optional: blueberries as a fun topping. Chocolate chips, toasted coconut flakes or banana chunks work great too!
Blend the banana, spinach and mango together with a ¼ cup milk until almost smooth. Add more milk as needed to blend.
Decorate three small 4 ounce jars with a Frankenstein face using sharpies. Once it dries, it will not rub off on little hands. And if you want to erase the sharpie marks, simply scrub with a sponge and dish soup. Easy peasy.
Enjoy with a spoon and a fun Halloween costume!
