At our house we love waking up to a warm batch of Flourless Blender Mini Muffins. Made in a blender and totally healthy, these are a toddler-favorite!
{Post Updated 7/2/19}: A long weekend away awaits us and other than packing up clothes the first thing I decide is what I’m bringing the girls to eat! It’s going to be a Flourless Blender Mini Muffins weekend! These little guys are super fast to whip up (all in the blender baby), great for eating in the car and I can pack them up for taking down to the lake! Plus they are healthy and filling! Winner!
Roughly two years ago, I got one of my favorite kitchen appliances ever! My beloved Blendtec blender aka BLENDY!
And yes I name a few of my kitchen favorites… Blendy (blender), Sebastian (orange Le Creuset), Julia (KitchenAid stand mixer) and Luigi (Italian pasta maker). I am a total kitchen nerd and proud of itMy lovely Blendy has gotten over 1414 3892 uses! In 2 4 years! I use it every day without fault. From smoothies to baby purees, to sauces and now MUFFINS!
Seriously guys, healthy muffins made entirely in the blender are the future my friends. All I do is blend all of the ingredients together and pop them in the oven! Heck yea!
- And they are healthy, gluten free and naturally sweetened.
- And they are flourless made with oats instead.
- And they have chocolate chips.
- And they are mini. Perfect for little mouths.
I mean c’mon guys. These little sweet bundles of delicious goodness are so comforting, fun and addicting.
Case in point: Poppy recently had a rough night. She was up at 4am and wide awake. So while she lounged in her little cozy chair watching Sesame Street, I made these Flourless Blender Mini Muffins.
She devoured 3 muffins with a green smoothie no problem. Once the hubs was awake, we switched. He took Poppy while I took a little nap. During that time, my kid somehow ate 10 more muffins!!!!!! HA! 13 muffins by 10 am!
After happily gorging on 13 muffins, I’d say these muffins are 100% toddler approved. As for us “grown-ups,” we absolutely love these little healthy chocolatey treats with coffee or thick hot chocolate.
I also love this recipe for play dates with friends! Muffins come together in 5 minutes, all in the blender and they are very customizable. Chocolate, dark chocolate, white chocolate, toffee pieces, cinnamon, dried fruit, nuts or flax seeds, all go well in these little guys.
Now I must mention, because these muffins are flourless and made with mostly oats, they are moist and a tad chewy. And honestly we love this texture! It’s a fun change up to normal muffins. Plus you know that are you eating something wholesome, good for you and chocolatey all at the same time.

Makes 24 mini muffins.
Ingredients
- 1 cups oats old fashioned
- 1 large very ripe bananas
- 1 large eggs
- 1/2 cup plain Greek yogurt
- 3 tablespoons maple syrup
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon kosher salt
- 1/4 - 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat the oven to 400 degrees F. Grease a mini muffin tin or use liners.
- Place the all ingredients except for the chocolate chips in the blender. Blend until the batter is smooth and the oats have broken down almost completely, about 3 minutes. Let the batter cool for 10 minutes before adding the chocolate chips so they don’t melt.
- Divide the batter among the prepared muffin cups.
- Bake for 8-10 minutes, or until the tops are set, domed, springy to the touch. Allow them to cool on a wire rack.
Notes
Muffins can be stored for up to 3 days but are always best fresh!
