The only granola recipe you will ever need! Basic healthy ingredients make this Crunchy Munchy Granola delicious and extra crunchy!
Do you have a weird food obsession? Healthy or not, just something that you can’t live without? For some people that might be coffee or chocolate or maybe bread or even burgers (ahem, I live with a burger addict). A food that never gets old no matter how many times you have it.
For me, its homemade granola and plain Greek yogurt. Weird? Probably? Am I a health nut, nope! Trust me I also am a dark chocolate, bread, coffee, nut butter addict. But for some reason granola is one of those weird cravings that has stayed with me for years.
I love granola. I just do! Crunchy, tasty, versitile…MMM! Granola has become my go-to food when I have the munchies. And trust me with a kiddo at home that seems to happen a lot. This granola recipe is so easy, straight forward and my absolute favorite, hands down! I probably make this every 3 weeks and devour it all by myself without any problem.
Good granola should pack a tasty surprise with every bite.. Is that toasted coconut flakes I taste? Or juicy sweet raisins? Or crunchy cinnomon-y oats? Roasted almonds? Trust me I could go on and on.
Why Crunchy Munchy granola is totes am-ahh-zing:
- Sugar in the recipe is all natural from honey
- Pumpkin seeds add iron to your diet
- Lots of protein from nuts and seeds
- Granola will remain crunchy for weeks
- Contains wheat bran which has tons of fiber (42% of your entire recommended daily value) as well as vitamins and folic acid
- Adding an egg white makes the granola extra crunchy. Kinda strange but awesome!
And if you are wondering how to eat granola, try: with milk, over yogurt (my favorite), over a thick smoothie, over waffles or pancakes, over ice cream or just straight out of your hand into your mouth (another favorite of mine).
So grab your oats, seeds and nuts and get to baking!
Ingredients
- 3 cup of rolled oatmeal (GF if desired)
- ¼ cup of wheat bran
- 1 cup of almonds
- ½ cup sun flower seeds
- ½ cup pumpkin seeds
- ½ teaspoon cinnamon
- A pinch of salt
- 1 cup coconut flakes
- ½ cup honey
- ¼ cup coconut oil, melted
- 1 egg white, whisked until foamy
- ½ cup raisins
- ½ your favorite dried fruit, I like dried cherries
Instructions
- Preheat oven to 300?F and line a baking sheet with parchment paper.
- In a large bowl, mix together the first 8 ingredients (grains, nuts, seeds, spices and coconut).
- Add wet ingredients: honey, oil and egg whites. STIR STIR STIR!
- Spread granola evenly over the prepared baking sheet.
- Bake for 35-45 minutes, giving a stir after about 20 minutes. The granola should get a bit toasty brown and smell delicious when it’s ready!
- Add raisins and dried fruit. Let cool completely. Lastly store in a big glass airtight container or jar.
