With Memorial Day weekend around the corner, go ahead and share a big bag of homemade Coconut Pecan Granola with family and friends.
To be honest guys, I was originally going to share one of my favorite Memorial Day salads but with the torrential downpour of this weekend, a summery salad didn’t fit.
It has been raining and raining and raining here! Nonstop all day rain. Or as my toddler points at it and says “AGUA AGUA AGUA.” Normally rain wouldn’t bother me too much but with a toddler it’s a little tougher. Only so much you can do indoors.
Plus this really infringes on our daily nap walks.
But instead of moping, we made the best of the rainy weekend. Kicked it off with a Friday IKEA adventure. We all know going to IKEA is quite the undertaking and trust me with a toddler who wants to walk it herself and touch everything it’s more like a saga.
Following that we had a girls date with one of my besties. Thai food, girl time and almost 3 hours of chatting, nothing is better for the soul.
Next on rainy weekend, we kicked off Saturday with a visit to a local bakery. Pastries and coffee bigger than my head! Much needed after my kid was up for 3 hours last night for no apparent reason.
Last but not least we rounded the weekend with a trip to the Minneapolis Farmers Market and lots of PJ time reading books and munching on homemade granola.
I’d say for a rainy weekend, it was pretty much picture perfect 🙂 happy toddler = happy mama

Yup I feel confident enough to call it that. Probably my favorite granola I’ve made so far! I still love my other granola recipes, but there is something about this one that makes it #1 so far.
It is crunchy, sweet, comforting and incredible with yogurt, milk, smoothie bowls or simply with your hand.
If you want to become everyone’s fav person this Memorial Day weekend, just bring a batch of this granola to share 😉
Yields 12 servings
Ingredients
- 2 cups oats (use gluten free if desired)
- 1 1/2 cup whole pecans, roughly chopped
- 1 cup sunflower seeds
- 1 cup unsweetened coconut flakes
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/3 cup coconut oil
- 1/3 - 1/2 cup maple syrup, depending on sweetness preference
- 1 tsp pure vanilla extract
- 1 egg white (skip for vegan granola)
Instructions
- Mix oatmeal, pecans, seeds, coconut flakes, salt, and cinnamon into a large bowl.
- Add maple syrup, coconut oil, and vanilla extract.
- Beat egg white until frothy (if using). Mix well into granola mixture.
- Spread out on a large baking sheet lined with parchment paper or a silicone baking mat for easy clean up. If you don’t mind cleaning an extra pan, spread granola directly on the cookie sheet.
- Bake at 300F degrees for 35-45 minutes or until golden brown. For clumpy granola, do not stir while baking. For looser granola stir halfway through.

Serve over yogurt, with milk, on a smoothie bowl or snack with your hands. And don't forget this also makes for a great hostess food gift packed in a pretty jar.
