[Recipe updated 10/5/18] It’s been a long week with many ups and down. But one thing has been constant, we have started each day with a healthy nourishing breakfast. Looking forward to a weekend away in the woods.
Here is what’s happening right now.
- I cannot find a cute good quality flannel shirt for the life of me!
- Poppy and I have a new breakfast obsession.
You guys I live in flannel country, AKA Minnesota land of Paul Bunyan, and don’t have a good flannel. Is this a tragedy or what?
I LOVE love flannel. Always have. I think part of the reason, is that it was so foreign to me when I lived in Venezuela and Texas. A fabric and fashion that I only saw on TV shows or movies. And even though you could buy it in Houston, it is not a popular fashion.
Moving here, I was excited to rock a flannel. Ha! I know I’m a nerd, I was actually excited for that! First thing I did during my first winter here, was buy a full classic red paid flannel PJ. Love’em despite how incredibly dorky I look. Or at least that’s what my girlfriends use to tell me.
I didn’t care! I actually ended up buying a new flannel PJ set every year for my first 4 years living here. So I have a nice small flannel PJ collection. As for flannel shirts I have just failed repeatedly.
As a transplant Minnesotan, I feel it is my duty to have a favorite high quality flannel shirt. I already married a native Minnesota boy, had a little Viking baby, spend summers at the cabin and tried pickled herring. Now all I need is a flannel shirt!
I have been on the hunt for a good quality women’s flannel since I moved to MN 6 years ago! The ones I’ve found, either have a weird cut, are really cheaply made or are plaid but not actually flannel.
So unfair because buying a flannel shirt for a guy is so easy. I have bought the hubs several and there are so many choices. Not fair. The search continues. If you know of any flannel shirt brand that you like, let me know! I obviously need help because my search is going nowhere. One of these days I’ll just rock my flannel PJ top with my mom jeans out in public and be done with it 🤓

What else is new? Classic Overnight Oats aka 3 minute toddler/mama breakfast. This breakfast could not be easier. It has to be one of the easiest recipes on the blog by far. Throw 4 ingredients in a jar and store it in the fridge. Wake up, grab a spoon and eat it all up!
Classic overnight oats is naturally sweetened, creamy, dairy rich, fiber packed, healthy and the perfect vehicle for fun toppings. It is also a simple and nutritious breakfast for older babies and toddlers. Soft enough for little teeth and soft gums while super healthy with oats, chia seeds, bananas and milk.
For my tiny tot, overnight oats always includes unsweetened almond milk, a healthy pinch of cinnamon, chia seeds, a bit of vanilla grassfed yogurt and a tiny bit of fruit if we have some on hand. Sometimes I’ll even throw in frozen berries overnight so they thaw by morning. To add a little extra fiber, I’ll add 2-3 prunes, chopped up, overnight which provide great flavor and natural sugar.
This has really become our #1 favorite-last-minute-I-have-nothing-in-the-fridge breakfast. And Poppy does not complain. Instead she licks up ever last drop.

Makes 24 mini muffins.
Ingredients
- 1 cups oats old fashioned
- 1 large very ripe bananas
- 1 large eggs
- 1/2 cup plain Greek yogurt
- 3 tablespoons maple syrup
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon kosher salt
- 1/4 - 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat the oven to 400 degrees F. Grease a mini muffin tin or use liners.
- Place the all ingredients except for the chocolate chips in the blender. Blend until the batter is smooth and the oats have broken down almost completely, about 3 minutes. Let the batter cool for 10 minutes before adding the chocolate chips so they don’t melt.
- Divide the batter among the prepared muffin cups.
- Bake for 8-10 minutes, or until the tops are set, domed, springy to the touch. Allow them to cool on a wire rack.
Notes
Muffins can be stored for up to 3 days but are always best fresh!
