I love mornings. Plain and simple. Even though they start early, sometimes earlier than I would like, mornings are fresh, hopeful and sacred in my house.
My mornings normally go a little something like this.
Alarm goes off at 5:30am and I slowly roll out of bed. With baby monitor in hand, I somehow make it to the kitchen without tripping down the stairs.
Coffee first. You know, priorities. Then I settle on the couch with coffee and laptop to do a little morning writing/blogging/research. Most of the time I stare out into the yard, for way too long, waiting for the morning light and enjoying the stillness and quietness of the moment.
Around 6:30am, as the sunlight starts to peak through the clouds, the rest of the house wakes up. The hubs jumps in the shower and I hear Poppy talking in her crib. This girl has full blown conversations in her crib. It is funny to watch.
Then it is breakfast time!
To celebrate the cooler weather and the start of apple season, we have been on an apple kick lately. Hence this incredibly easy, delicious and nutritious Cinnamon Apple Chia Pudding recipe.
Chia seed pudding is pretty magical actually. These little tiny seeds are packed with protein, fiber, omega 3 fatty acids, antioxidants, and they provide sustained energy! What makes them even cooler, is that fact that they can absorb a large amount of liquid creating gel or in this case, a pudding consistency. And don’t worry, they are not crunchy in any way. As toddler food, breakfast or snack, Cinnamon Apple Chia Pudding is fabulous. Healthy chia seeds, mixed with milk and topped with tasty fruit. Don’t have apples? Get creative. Add other in fruit, natural jam, nut butters, apple sauce or yogurts!
A morning that starts with an hour to myself, the adorable bed hair of my two loves and Cinnamon Apple Chia Pudding is a perfect fall morning indeed.
Cinnamon Apple Chia Pudding {toddler friendly, gluten free, vegan)
Serves 3-5 servings depending on who is eating it. Toddler normally eats about 1/4-1/2 cup mixed with yogurt. I normally eat about 1/2-1 cup mixed with yogurt. Recipe doubles easily. Eat within 5 days.
Make ahead tip: Cook apples in cinnamon and butter the day before. Store separately to the pudding. Then quickly reheat in microwave for a few seconds and spoon over pudding.
Notes: I love using unsweetened vanilla almond milk for baby and family. Almond milk is a great source of nuts into my little one’s diet. But of course use what you like best, being aware of food allergies.
- 1.5 cup milk (cow’s milk, almond, soy coconut)*
- 3 tablespoons chia seeds
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 2 teaspoons maple syrup
- 1 tablespoon butter
- 1 apple, chopped (peeled if desired)
- Optional: grass fed yogurt
In a bowl, combine the milk, chia seeds, 1 teaspoon maple syrup, vanilla, and 1/4 teaspoon cinnamon. Cover and place in the fridge overnight (or for 4 hour).
For the apple topping, add the butter, apples, and 1/4 teaspoon cinnamon. Cook until the apples are softened, about 5 minutes. Then mix in 1 teaspoon maple syrup.
Spoon the apples over top and mix a big spoonful of yogurt (if desired).
