What better way to treat your mom than with a gorgeous batch of Blueberry Lemon Scones on Mother’s Day?
Nothing says happy mother’s day like a freshly baked batch of Blueberry Lemon Scones and perhaps a fancy latte delivered to your mom’s front door. Seriously what mom, nay, human, wouldn’t love that?
Mother’s day is a fun holiday in my opinion. And I’m not saying it because I’m a mom now (for realz). The way I see it, it’s a day to hang out with or do something special for your mom. You know the woman who birthed you….no big deal.
And I am not talking about spending a bunch of money to buy expensive stuff. Nah, I think most moms would prefer being treated or having a lovely chore-free day either to spend with their family or to enjoy some alone-time.
My family’s tradition growing up was always to make my mom a fabulous breakfast while she got to “sleep in.” We would all have a lovely brunch together and then give mom homemade cards or crafts. As we got older the “homemade gifts” turned into flowers and mimosas, which she also enjoyed 😃
My dad would then plan something fun to do as a family the rest of the day or would buy her a little gift. Luckily with time, dad has gotten better at the whole gift giving thing. Partly because my sister and I started helping him. Because for a while there, it was a lot of ugly incorrectly sized sweaters or blouses that my mom would always end up exchanging.
I loved our tradition. Simple, fun and heart-felt.
Now that I’m a mom, I’m exited to see how our tradition evolves. Regardless of what we do, I want this to be a day that is stress free for everyone and not about buying stuff. Just hand me a batch of these freshly baked scones, a cooking magazine and a lawn chair on a sunny day and I’m set!

I kid you not. They are bakery quality delicious and yet have zero butter????? This totally freaks my freak. A scone with no butter is like saying a pizza with no cheese? It doesn’t make any sense and yet it totally does.
How are they so good? A secret ingredient… FULL FAT COCONUT MILK.
The surprise ingredient keeps these lovely pastries moist but with the lovely crust of a scone. And somehow, the coconut flavor just melts away. You can’t even taste the coconut at all! Oh food science how I love you.
And then fresh blueberries and bright cheery lemon zest just take these scones to a whole other level.
